Bro It depends on terrain, if you mostly ride on rough plane then 7 gears would be enough, but if you climb mountain like stiffer roads then you should go with 21 speed or 12 speed one drive train.

Gears works as per speed. So for initial speedup lower gears will give you quick change in speed, whereas at high speed higher gears are easy to peddle and give you better speed, so you have to switch gears as per speed

Nope idk what he said or what are you talking about!! But the 7th gear is hard to paddle so the rotation of crank is lower compared to higher gear , where as due to greater torque you can paddle easily on first gear so it’s quick.

Actually the speed depends on the gear ratio. Count the teeth number of your single gear if it’s 14 then the speed will be same otherwise speed may vary.
