When I used to make bolognese for a restaurant that specialized in lasagna I learned to use a heavy duty whisk to break up the ground beef. Beat it up and it does a great job of breaking it up super small and even.

I've never heard anyone say that you can bloom the tomato paste before. I've heard of blooming the cocoa in brownies. And just recently someone was making cacio e pepe and said they were blooming the pepper with a drizzle of oil and a laddle of pasta water. I like the description of that and it makes sense. Lasagna takes a while to make if you're doing it from scratch. But it's well worth the effort. Yours looked delicious.

Looks sooo delicious! I don’t usually add wine to my sauce, but I’m going to try it next time for depth of flavor for sure! And usually I use ricotta, but I just found out it upsets my son’s stomach so I’m excited to try this béchamel sauce instead, thank you! Hope you are feeling well…thinking of you and your family. ❤

Oh this looks so tasty! Very similar to what I do accept I use slightly different herbs and add a little drop of Worcestershire sauce in the mix 😊

I saw somewhere that bolognese is traditionally white wine and chicken stock based and the tomato sauce version is more of an Americanized version. Regardless of whether that’s true I’ve been making mine with the typical sofrito, tomato paste, and meat with white wine and chicken stock and it’s always amazing, definitely worth a try
When you said "come together", that would've been a great opportunity to add just a snippet of the classic song... Maybe when the lyrics go, "right now...", or whenever would've been great. Anyway, love the channel man.
Nice recipe! Try making the onion celery and carrots almost caramelize before adding the meat. Try also a 65/35 split between beef and pork

Looks delicious! Food brings such comfort, in so many ways. I was thinking the other day… as Christmas lights go up in town, I was thinking of tamales. I was like?!?? Growing up in louisiana, my mom always made tamales when it was cold around the holidays and winter. Im not Hispanic, we did travel to Mexico City etc back in the 70s by truck and spent time. So maybe that’s where she leaned. They were so good! I remmber heping with the corn shucks etc. Anyway- that’s my Christmas food memory, wanted to share. Seems she would use like a Boston butt, I’ll have to ask her. I mostly remmber the corn shucks, masa (?) flour on the shucks and the the filling plopping in and rolling up. Then the sauce

Hey Kev! Been loving the videos! Ever tried throwing a bay leaf into your béchamel when you scald the milk? I feel like it might add that little extra depth of flavor and maybe bring a bit of a flavor parallel with the bolognese to the table. Either way looked delicious as always.

Traditional bechamel also has nutmeg. Really gives it some depth. I'll be trying the bay leaf in the scaled dairy a well. Great recommendation!
Damn this looks awesome, Kev!! Btw, I do my bechamel in a one pan. Do you really need to heat the milk/cream in a separate pan?
I had a friend who's family is Maltese. His mother would make bolognese while we were at school during the day. After school we would usually smoke some ganja and after the munchies kicked in we would put a big dent into the kitchen. Especially the bolognese. She would get so mad, but damn it was delicious.

for educational purposes bechamel sauce with cheese in it is called a mornay sauce - just fyi. Really scrumptious looking lasagna man!
I like making any red sauce with spicy ground sausage instead of ground beef. Way better!
This is very similar to how my grandma made lasagna!
This sauce is how I normally do my sauces for lasagna, But for special occasions I've started using Stephen Cusato's recipe from Not Another Cooking Show. Instead of tomato puree, it uses about half a cup of tomato paste, half a bottle of red wine, and top the rest with water until the beef/veg mixture is just submerged. Cook that down for about 4 hours, topping back up with water as necessary, and finish off with a cup of milk or heavy cream. WAY too rich for a regular lasagna, but great for Christmas.

I’ve been doing longer videos. Not always easy to find longer music without lyrics that doesn’t make it sound like you’re in an elevator! 😀 I’ll work on it though, I miss the music too!
