6 Ingredient Healthy Chicken Barley Soup! | The Recipe Rebel

This Chicken Barley Soup is hearty, healthy and made with 6 ingredients! Easily customizable and you can make it stovetop or slow cooker! (MORE BELOW)
Ingredients
1 tablespoon oil
3 large carrots peeled and chopped
2 ribs celery finely chopped
1/2 medium onion finely chopped
5 cups low sodium chicken broth
2 chicken breasts (about 300g total)
2/3 cup pearl or pot barley rinsed (120g)
1/2 teaspoon salt
1/4 teaspoon pepper
Instructions
In a large dutch oven or soup pot, heat oil over medium-high heat.
Add carrots, celery and onion and cook until onion is translucent, about 5 minutes, stirring often.
Add broth, chicken breasts (raw and whole), barley, salt and pepper.
Bring to a simmer, cover and reduce heat to medium-low. Cook, stirring occasionally, until barley is tender, about 45-60 minutes.
Remove chicken from pot and shred with two forks. Add back into soup, taste, and adjust salt and pepper to your preferences.

    I started eating barley recently I'm 33 never really new about it until watched it on KZread. Now I use it lots so cheap.😊

    I’m making this as soon as I finish my coffee. In my frig, I have three heritage carrots, purple, yellow and deep orange. This should be colourful.

    I use bacon fat to fry the Onion and garlic for a minute or two, then add mushrooms, carrots, celery, corn off the cob if I have it, make my own chicken stock with vegetables, then strain it, add that to the partly cooked bacon fat vegetables, then add barley, it simmer for hours, then debone the chicken from the stock and add it last. I use bay leaf, and other spices.

    This seems great but I'll have to find an other recipe... there is no details for quantity of broth, chicken and time of cooking (not clear on time). Half the recipe is missing...

    It’s easy enough to eyeball it and adjust as the soup cooks and the barley expands, adding or removing stock (or water) as needed.

    Add garlic, thyme, salt, pepper and chop your chicken beforehand. No chef would ever serve a soup without salt and pepper. Lol c'mon.
