    Hey Al put all those skins and pulp on the dehydrator tray and dehydrate. Then put into a grinder and make tomato powder to add to soups and stews. Yum. I love your channel.

    I was going to say the same thing! I dehydrate mine and then put them in my little coffee/spice grinder (just for spices), and then seal the tomato powder in a Ball jar.

    Hi Al, Gina and Olivia. I so look forward to your channel, again as I said in a previous comment, I am so happy to see how much Gina and Olivia contribute to the farm and helping you. I too was born and raised not far from Boston, MA, Webster, MA actually, the town with the really large Lake name. After my Air Force career, I settled in Worcester and later to Shrewsbury, MA, until my oldest son called me and asked me to retire early and become their stay at home grandpa. It was easy to say yes, but although I miss the ocean, seafood, and lots of New England's specialties and some of my family members, Ohio is home to me now, my son and his wife and now his two daughters. Its been an awesome experience to help raise these girls, after raising 4 sons of my own! If you are anywhere near Jaffrey, NH, my baby brother lives there his name is Gregg, I will give him and his wife your channels' information so they can share like I have in being a part of your family through Lumnah Acres.     I am glad your leg continues to do good and that it didn't give you any pain. That's a good thing! Gina, those tomatoes are just beautiful. I love watching you guys because I love seeing all aspects of the homestead. From the animals, to the building, to the gardening, to the harvest and canning! It's all great and I love that you do it all together as a team. I loved making sauce when I was younger, so good to have the shelves lined with produce from the garden.     Here în România we boil the tomatoes for 10 15 minute before we run it through the machine. Because the machine goes a lot smoother and you will get all the sauce from the tomatoes

    Good tip, that's also how Italians do it ...... here you can see a really funny video how it is done in Sicily .... and yes, from own experience, I can assure you that it is done like that :-))) and you will see that your mashine will spit out MUCH less pulp.     Yes, that's how we do it in Pennsylvania. I make tomato soup by cooking it 10 to15 and then run it through the mill. If you want I can link a recipe. It's thick like tomato bisque, very hearty.

    this was so cool! You have said you wanted to share what homesteading farm life was all about. today i leaned. While i do like the building, episodes, i found i really liked the harvesting and preparation that you are doing, not just for now but all that you are :putting away: It really rounded out the picture of how your life works and "life on the farm". I also appreciated how Al was there to help Gina just as she has been there for him. It did my heart good! I cracked up at Olivia's reaction when dad put his sauce right on his pasta! SO typical!     Green tomato chutney! when finished pouring the tomatoes back together I found myself tipping my tablet with her. I love the way Figaro runs up to Al in the morning, stops just short and turns around for Al to let him🤗

    Give the man credit...works side-by-side with his wife in the kitchen! I give them BOTH credit; Gina works side-by-side building a big structure as well as all the other team work on the homestead. Great examples of a loving couple at work! Yes, Al missed when pouring, and did you notice...Gina didn't explode in anger at him. He was dealing with a large bowl with HOT liquid at an awkward angle. They have their priorities straight! I enjoy the peace and progress they share with us. Any who "roll their eyes" should just chill!

    Sarah at Living traditions has a recipe for Salsa Verde using green tomatoes that is just fantastic. I made it this year and you control the amount of heat you put into it and it is delish! You can Google the Ball Blue book recipe for Green Tomato Salsa Verde.

    i nearly made the same comment as we'll as her tomato sauce method for reducing the problems of some sauce being too watery. Here in Texas we have some fall tomatoes putting on that may not make it to red so I was thinking of Sarah's Salsa Verde. Joy Giles

    Your cherry tomatoes boil down then strain out nicely into a sauce or thick liquid for soups or to thin out regular tomato sauce, i made and froze a batch today, my cherry tomatoes got over ripe but were still useful.

    If you ever decide to boil the tomatoes first, cut an X on the non stem end, this allows the skins to slide off and the juicer will only have to deal with the pulp and juice. That way the passes will yield more juice . Congratulations on your first successful sauce canning.

    Cook them in a crock pot and you won’t have to monitor. Also Sarah on Living Traditions Homestead ladles off the tomato water which makes for thicker sauce without having to cook it down for so long.

    Yep. I've done this with my Romas. Cut an X & boil them for a minute or two and the skins come right off. If you really want some amazing flavor, instead of blanching roast them on a baking pan on the grill or under the broiler. That's how I usually do them for sauces & canned salsa, and it always turns out amazing.

    Beautiful tomatoes!! Gina, it’s easy to make tomato sauce. Take it from a daughter from an Italian citizen who grew up making tomato sauce here in West Roxbury, Massachusetts and in Italy while on summer vacations!!!! 1st, you need to boil all the whole tomatoes from the garden in a big pot! 2nd, pour the hot water out of the pot. 3rd, put a HUGE pot underneath the machine’s spout where all the sauce comes out. 4th, put the cooked tomatoes with skins in the machine. NOT all at once. Your daughter can help you put the tomatoes in the machine while it’s doing it’s thing of pressing the cooked tomatoes! 5th prepare the ball jars with 2-3 leaves of basil leaves 6th, jar the sauce in ball jars, you decide the size of the jars. We used to use the tall ones. In Italy, we used the empty glass Coca Cola bottles.....remember those?!?! 7th, cook the jars in hot water like you did with the pickles, etc. 8th, store you tomato sauce jars, You are done!

    I have a kitchenaid stand mixer and bought their sauce maker attachment this year. Debated about the cost, but it was a blessing and over the years will be a delight to have. I got 24 pints of tomato sauce out of my garden and gave away at least 4 time the tomatoes than I used. So nice to bless others. Not bad for my first ever garden. So sad, putting my garden to bed this week, prepping it for next year. Learned a lot the first year, many changes coming next year.

    You can use a large measuring cup to transfer from bowl to pot. Less likely to make a mess. Looks great.

    Gina and Al before freezing your tomatoes core them and cut an x on the bottom. Once they are totally thawed the skins literally pull right off. Place them in your kettle and save the skins to dehydrate for powder. Then cook the tomatoes down. Roast your garlic and onions in the oven then add to the tomatoes. Take your emersion blender and blend everything together like you did. You can then strain the little bit of seeds that didn't get pulverized by the emersion blender if you choose to do so. A lot less time consuming and less clean up involved. Then jar it up as usual.

    I think you are over tightening the lids, they're only meant to be finger tight I believe.

    Agree, you aren't supposed to tighten them down like that, causes them to buckle lids when processing. Fingertip tight. Had to explain this to my husband over and over again. I think its a man thing lol, ya know, nuts and bolts are always tightened down as tight as they will go.

    Gwen Pool - Well, a lot of folks seem to think that tighter is better. As an engineer, I spent a lot of hours explaining to technicians that if you over-tighten fittings, they are more likely to leak than if they are under-tightened. I don’t think many of them listened... ;)

    Good morning , again I'm wishing you're videos were longer😥. The 🐐🐐 are so enjoyable to watch. I have noticed that Jena is on the homestead full time now. It has taken your channel to a new level. Your living my dream, how did that happen lol. ! I grew up as a child of a Vietnam vet. . When he became disabled from agent orange, we started a little homestead..my most favorite time of my life. We started a garden the first summer after rock gardening all winter. Omg, the rocks just kept growing, every year. Lol. We had a milk cow, and Male we raised for beef. We raised baby piglets to sell or people bought shares of it. We lived in a valley that raised everything and every animal you normally would see on a farm. We traded our BROWN SWISS'S DAIRY COW HAD THE BEST MILK. WE TRADED FOR DOUBBLE YOLKD EGGS, WE HAD EVERYTHING ELSE. CHICKEN HOUSES, FOR EGGS, AND MEAT. I WORKED IN A FEW DURING THE SUMMER. THERE WAS A HOG FARM DOWN THE ROAD THAT YOU WOULDN'T KNOW WAS THERE BECAUSE OF WHAT JUSTIN RHODES CALLS, GOOD PROPERTY MANAGMENT. YOU COULD SMELL THE EGG HOUSES WHERE THEY WERE 3 TO 4 TO A CAGE AND THERE WAS A PIT UNDERNEATH OF THE ROWS OF CAGES. HORRIBLE LIVING CONDITIONS. THE CHICKENS ALTHOUGH NOT STANDING IN THEIR OWN FECES, THE FUMES CAUSED A HORRIBLE INFECTION IN THE EYES OF THE CHICKENS. SUCH SAD CONDITIONS. I WOULD NEVER WORK IN A CAGE HOUSE AGAIN. I THINK I HAVE WORKED EVERY POSITION IN EVERY CHICKEN PLANT OR CHICKEN HOUSE . FROM EGGS TO HATCHING, RAISING TILL THEY ARE OFF TO MARKET. I THINK IT WAS LIKE 3 MONTHS. TODAY, I'M STUCK IN THE CITY AS MUCH AS I WANT TO GO BACK TO THE COUNTRY, UNTILL GOD BLESSES ME WITH ONE, ILL BE PATIENT AND LIVE VICARIOUSLY THRU YOU GUYS. TAKE CARE, GOD BLESS. DEB

    Wow! That pasta sauce looks delicious! Suggestion: Only finger tighten the canning lids, which allows air to escape and make a safer seal. It appears that you are tightening them a bit too much.

    I just do plain tomato sauce with salt and jar it. That way I can make different things with it when i need it... eg pasta sauce, rib sauce soup etc. I dont make it as thick as i know it will cook down later. Love your videos!

    I'm glad your leg is better, and your leaves are beautiful. We only had 2/10" of rain over the weekend, so our leaves don't have much color, but we are still hopeful they all won't be brown.

    You can find "green tomatoe" chutney or relish recipes on line. Fried green tomatoes are really good. I just slice them, dip them in egg wash, then panko mixed with salt/pepper (you can use fine crushed soda crackers or fine grated dried bread crumbs or even crushed corn flakes = anything that you prefer to use for "breading" ), then fry in butter added to olive oil and served with sour cream. Delicious.

    My extended Southern European family used to get together for our annual pasta sauce day. I wish we had your machine back then. I have a couple of tips to offer: Boil the tomatoes first for maximum extraction of sauce. Try replacing some sugar with grated apple (both are good to reduce the acidity of the sauce).

    We took down the greenhouse today, kinda sad, but needed here in Duluth, MN. Putting up a permanent greenhouse in the cellar soon. Going to try growing things all year. Even if it’s just micro greens. The tropical plants will love it! Nowadays, you either try or perish. Best to you and your family. Preps already made for next years garden. It’s something everyone needs to take seriously.

    Good Monday mornin Moose Crossing .... pasta/pizza sauce looks very very nice guys. Some people (my brother} grind up carrots to put in the sauce, instead of sugar.     Hi Lumnah family! I don't know if this would interest you as an idea for a video but maybe after your harvest season you could review what you grew on your property in both the greenhouse and yard (what types of tomatoes/greens/etc you grew and where you bought them from), what worked for you and what didn't grow well, maybe even what you are interested in trying out next year? I know this would help out a great many people who have to order seeds and plan ahead that live in colder climates too! Great video today, love the sauce recipe!

    Those are amazing tomatoes. You've gained a ton of extra growing time with you green house. I live in North East Ohio and although I have tomatoes on the vine still the leaves are browning out and I've had to cover them a couple times due to frost. Great investment.

    Good morning from the south. I would have utilized that lift for some much needed branch and tree trimming around the place. When they say a farmers job is never done they mean it. You have a nice piece of heaven there. And safety is always key to keeping it that way. I am not doing a vlog so I know 1st hand. Winter is knocking at the door. You should think of doing a segment as to winter proofing the homestead. Hurricane Laura came through and did that for the entire state for us. Keep up the good work. Here's another project for you. Coming out the basement to autos would be better if not hit with I need the umbrella opened just to get out of that door. A nice front porch for a true home appeal would be good also. Just a few suggestions. Did them all to my place to have that welcome home feel to greet anyone coming. A lot of people love to sit on porch and enjoy nature. Rain, snow or just communial time.

    I’m not a huge fan of tomatoes and they don’t like me much either but making home made pasta sauces are the best and ketchup too! Making your own just tastes better than store bought 😊👍

    I think it has to do with the amount of work you put into it. Tomatoes are naturally acidic. Any time I add lemon juice to tomato sauce I make sure I have some Rolaids around.

    🇬🇧 I only like my tomatoes fried in butter as that reduces the acid and I hook out the seeds first. They are not good if you have arthritis or diverticulitis.

    My relatives once visited us in California. I had made a lot of tomato juice and several dozen cans of Ho,Meade pasta sauce. We had gleaned the fields for the onions, garlic and the tomatoes. My in-laws had never tasted any thing so delicious as that sauce. They also had farm raised sausage, and fresh eggs. Oh how I miss California's Central Valley. God bless America.

    I picked over 300 tomatoes. This has been my 3rd time growing tomatoes. I gave them away, I made my own marinara sauce and froze it. Next year I want to learn how to can my tomatoes. This video has been very helpful, I took my notes lol. Thank you you guys are amazing What is the names of all your goats??

    Yes I saw they put tomato paste in their sauce so they didn’t have to cook down so long and thickened it up great.

    Best place to ripen is on the plant. Otherwise throw em in a paper bag with a ripe banana and make sure you keep checking them. The banana releases more ethylene than the tomatoes and will speed up the (natural) process.

    Small tomatoes can be halved, drizzled with olive oil and put in a slow oven to dry like "sundried" tomatoes. For the large green tomatoes, you can pickle them, but try a method my grandparents used - remove the stem and wrap the tomato in newspaper, put them on board stem side down and store in a cool dry area. We had brackets on the back wall in a cinderblock garage tool room. I remember going out to get some for a salad at Christmas.

    Loved this vlog...good balance of subjects. Always enjoy. the animal shots. What a nice journey from picking tomatoes all the way to the end product of tomato sauce. Al, I yelled when you spilled the sauce, but fortunately you were able to recover that and more by regrinding.

    roast your garlic cloves for 15 mins they will be soft, sweeter and easier to peel as you just squeeze the clove.

    I just canned a few flats of tomatoes the other day. Try just canning them as whole tomatoes or purée. That way you can use them for a variety of recipes, not just pasta sauce. And if you’ve never made this sauce recipe before, you might end up with a lot of sauce that you might not love. Just a thought. Nice machine.

    Hey trick for you gina. When peeling loads of garlic, set clove on board put knife ontop on its side and hit it a wack with your hand. Or put them in the oven for 20 mins the cloves will just fall out both ways. Will save loads of time...

    I had a Tuxedo cat that was just like Figaro, extremely friendly and out going. As for the pasta sauce, IMO you made tomato puree. I can't be the only person that likes larger pieces of tomato in my sauce. Adds a lot more flavor, again IMO. The neighborhood I grew up in was primarily first generation Italians. Tomato's were cooked down to make sauce. You could smell tomato's cooking through out the neighborhood when the end of the season tomato harvest began. The good old days.

    I would think the lemon juice would change the flavor of the sauce ,this is the first time I have heard of putting it in. And also I have heard and read to not tighten the lids tooo much. So I ordered the book so I can read the directions

    Lemon juice, citric acid, and vinegar raise the acidity of the tomato sauce so that they can be safely water bath canned. Taste isn't noticeably different. If you don't raise the acidity, you're taking the chance of spoilage. Or, you would need to use a pressure canner instead of the water bath canner.     Doesn't change the taste. Newer breeds of tomatoes are not as acid as old varieties so adding acid is a must.

    Good Morning Al...Such a beautiful pastoral autumn sky and scene around the 24:16 mark. New Hampshire at its finest. My favorite time of the year. But my friends and family always give me a hard time, when I tell them Thanksgiving is my most cherished holiday.

    Pour directly in front of you, not from the side. Way less waste. Unless you want whole intact garlic cloves for aesthetic reasons. just lay the clove down and smash with the side of your Chefs knife. The skin pops right off and is easy to seperate from the flesh of the garlic clove.

    This reminds me of high school. We used to have around 50 tomato plants every year. Besides canning "stewed tomatoes", we'd also make a whole lot of fresh spaghetti sauce. We didn't bother with the juicer, we just boiled it down. Once the sauce was cooked, it would simmer for about 2 days to thicken. Best sauce ever.

    When you start to have fluid leaking from the hopper and main housing, you need to clean the strainer because it will get clogged up. It also helps to have a small rubber spatula to scrape the outer side of the strainer

    gerald corbitt wow you are very critical, I guess you are perfect in every thing that you do? It’s easy when dealing with an enormous bowl like that to not be able to see the other side. Sometimes trying to do things fast can cause more mess and more time spent cleaning up. What I would have done would have been to scoop it into the pot with a large measuring cup and then when the volume was significantly reduced I would then try my hand at pouring the bowl into the pot. It’s one of those things in life if you never make any mistakes then how can you learn from them? So I would suspect he won’t do that again and if he does well he didn’t ask anyone else to clean up his mess he did it himself. Which I think says a lot about his character and anyone that is so critical to judge another must surely live a perfect life...Gerald Corbitt?

    I would try to keep them growing by putting wood mulch at the base of the plants and either hang plastic or fabric row cover around them . I had tomatoes outside in Franconia and covered them with plastic to prolong the season. Plant sweet alyssum in with your tomatoes to get rid of the hornworms.

    there's a video here on KZread about an old Italian grandmother making pasta sauce for the year and she cooks them, pip, skins and all, first before putting them through a foodmill. Now, I don't know anything about making pasta sauce, but that looked logical to me, to cook all the 'goodness' from the skins and reduce the watercontent first before pressing out the skins and pips.     Hey Al, I grow a bunch of cherry tomatoes and when I have a lot I cut them in half and put them on my dehydrator trays and when the get done dehydrating they are just like eating tomato gummies, so delicious. I think you should try that, they are so sweet.
