    Or, 4 tablespoons of sea salt per quart jar....for us over the pond. Mine came out perfectly. I added diced apples, shredded carrots and caraway seeds.....delicious! The seeds really made it pop.

    Thanks for the conversion, it’s useful for others! I do try and be mindful to convert oven temps, and other things in most of my videos but some things are easier than others to remember! 😊👍

    Thankyou for sharing Carl, great ideas. I must say, I did wrinkle my nose at the fridge initially, but seeing how long it can keep in there is WELL worth knowing and sharing. Great vid.

    Thanks Kylie! I can say that I was surprised when I found out as well! But they do last a very long time in the ground (over a year) if left there so it kinda makes sense! You will lose the outside parts but they protect what’s beneath! 😊

    I always noticed my refrigerated cabbages lived a very good, long life. I would have certainly chickened out well before 1 year though

    ❤️❤️❤️ I especially loved the bag of water in the sauerkraut to keep it submerged. I am definitely going to try that.

    Yes...yes...yes....it DOES keep a year in the fridge...have to peel off s few layers to use...BUT IT WORKS !!

    Thanks for sharing these tips Carl. Had never thought of dehydrating cabbage before - not sure why?! Will definitely give it a go. 👍 Do you ever add other veg or spices to your sauerkraut?

    Not this time, sometimes I add garlic but often I just leave it plain.

    @@SelfSufficientHub sometimes we add onion and carrot - almost like a fermented coleslaw, and with red cabbage we’ve done grated apple and/or beetroot and red onion. I know you’re not a fan of the pickled beetroot in a tin but this is quite different. Sometimes spices like mustard or cumin etc, just to mix it up a bit, but we do love it plain too.

    If you do a large quantity of fermented cabbage. At point you like the taste, can you freeze or can it up? Or will it still change as it ages?

    Once you refrigerate the change slows to a crawl so it stays almost the same. I suppose you could waterbath the jars at this point to actually stop the fermenting and then store too.. hope this helps

    Could you put the cabbage and salt into a mixer with a dough hook to beat it up? My hands are not strong enough to knead it.

    Hi Karen, I’m not sure that would work but you can use a pestle and mortar or even a rolling pin to beat it. Hope this helps
