How flexible are these owners with the pet sitter leaving their house for a bit for some fresh air, only to return to continue taking care of the pet? $50 to stay at a person’s house for 24 hours without the ability to pop out occasionally seems unreasonable

Depends on what’s agreed with the owner. There might be some pets that can’t be left alone (but would love a trip to the park with you!) but I think most pets would be fine to leave for a couple of hours. It’s a common thing to discuss when arranging the job so shouldn’t be an issue.
