    @@thomasapayne1 Here are the basics but it is long and I may have to split it to multiple replies. I live alone and generally follow a keto diet. I take recipes that serve 4 to 6 and then package them in pint size freezer bags as individual servings. I usually use an air fryer, a mini crockpot or my mini instant pot to cook the food. This time I made Dill Pickle Chicken, Lemonade Chicken, Dill Salmon (Freezer Meals 101), Tuna Patties, and Tuna Broccoli Alfredo that way. I also made a crock pot full of Keto Chili and one of Creamy Taco Soup; these got divided up into serving sizes and then frozen. I made cauliflower rice packs with keto sauces and added the extra proteins (chicken, tuna, ground beef) to round out those as meals.

    @@thomasapayne1 I made chili dog packs by putting a single sausage in a snack size bag and then putting that in a pint size freezer bag with a bun and stapled a serving of chili with it. The snack bag keeps the bun from getting soggy as it thaws in the fridge at work. I made Tuna Salad and Chicken Salad using humus and sour cream instead of mayo so I could freeze it. Some of these are for lunches and I also use leftovers for that. For breakfasts I put a mixture of eggs, peppers, onions and sausage in serving size freezer bags. I can pull these out and fry or microwave depending if I am at home or work. I made berry and yogurt parfaits also. I buy keto-friendly bread and freeze it in serving sizes because there is no way I could go through a whole loaf before it goes bad. I can toast the bread and add cream cheese or avocado on top for a quick breakfast; both of those toppings freeze well too.

    I love this idea and have been doing it on a limited basis since my husband passed 15 months ago. I still make a full meal but then place individual servings in freezer containers. It works out well because I can give half the meals to my Dad who can reheat like a pro but isn't much of a cook. Dad has a sweet tooth so I also make frozen cookie dough balls for him to bake for a little dessert.

    Great job. I love that you also shared with your father. Once I cooked enough meals for a month of lunch and dinners. I'm still excited about it and will be doing it again. It's such a good plan because you can eat good even if you're too busy or just not up to cooking at the moment. Keep up the good work.

    WOW! I would like a lot more of these meals varieties using these containers. I am cooking for 2 and myself. One is my brother who has had a stroke/triple by-pass surgeries and cannot cook his own meals because he cannot use a stove or oven, only a microwave to reheat. Thank you so much for telling me about freezer burn. I was NOT covering my prepared meals with plastic. I am going to do that today with the ones I've made that I've have already placed in the freezer.

    I'm a single person who lives in a share house. I have a very small space in the freezer and fridge. But I only get paid once a month. I have IBS and reflux so I should avoid wheat, dairy, potato, pork, corn, soy, coconut and a few other things for optimal health. So when it comes to starch I'm limited to rice and sweet potato. And I have a bunch of other health problems so I struggle to stand for a long time, and I struggle with motivation. one of your regular meal prep day videos came on to my feed and it has changed my view point. I went out that day and bought 1kg of chicken breast, 1kg of carrots, 3 capsicums, an onion and 2 cans of marinade satay and Malaysian curry. I already had 1-2 cups of cooked rice. so I chopped up all the ingredients and divided them into five. one went into a frying pan with 2 scrambled eggs and the rice and became stir fry and four went into freezer bags. I have a 1.5L slow cooker and I made sure it would fit in it. and divided the sauces into two. I'm defrosting my first bag now. and I could cook it in a slow cooker or in a frying pan. depending on my energy levels. And then put on some rice in the rice cooker and I think I should get 3-4 meals per bag. I'm excited to see where I take it next month.

    I made meatloaf muffins in metal cupcake cups, put a big swirl of mashed potatoes on top and decorated with little green peas and little diced carrots. They looked like party cupcakes. Great fun for kids!

    The leftover enchilada filling - add it to rice for a Spanish rice side, or add rice & a cooked protein for a main, or add rice, a cooked protein &/or heat up some Mexican chorizo (not the Spanish sausage chorizo, u want the tube of soft Mexican chorizo) add the filling mix, let cool & using refried beans on a large flour tortilla, add this new filling with a bit of cheese & make oven baked burritos. Freeze individually or in groups of 2 or four. Great in a microwave, or put 4 in an 8x8, cover with salsa, cheese & bake until hot. Serve with dice fresh tomato & onion, sour cream & avocado or guacamole. Maybe a bit of shredded lettuce… yum

    Definitely teach your kids to cook. My oldest son met and was in a relationship with a girl who was NOT taught to cook. Not even the basics. She would burn Kraft mac and cheese. He was able to provide yummy, healthy meals while she learned to cook herself. My youngest son is also quite a good cook, and is able to take care of dinner on evenings where I work and dinner would just take too long to fix during a break. My dad is one who loves tv dinners, so I'm going to take these ideas and he'll have homemade freezer meals to reheat. I am also going to put some together and give them to my mom. Big Mother's day gift because she too in single now, and won't cook because it's too hard to cook for one. Thank you for the great ideas.

    I really like the idea of making your own TV Dinners. And Amazon sells Freezer Containers in every size and with divided sections. Breakfast, Lunch or Dinner, it doesn't have to be 1-2 people in the Family. You might have different dietary needs. Or your kids are working now. And or you may have picky eaters. OR maybe there is something YOU love to eat, but you never make it because you are the only one who likes it! Now you can customize any meal. Hot Enchilada Sauce for the Adults and Mild for the Kids. YOUR taste buds matter too! If nothing else at least if you are making home cooked meals, you are eating healthier! No extra added chemicals or fillers. Great idea to play around with! TY Ladies!☮

    This is how I do life and especially freezer meals! This was fantastic and I have so much to unpack. A couple of things - I don't think you need worry about freezer burn in this case because the meals won't be around long enough. I think he is going to have to fight off the roomies! When I do meals with mashed potatoes and gravy is appropriate I just put a pat of butter on top of them and a hefty spoon of gravy and freeze away - just like Swanson did. Sending mashed potatoes on their own is great because he can heat some butter in a skillet and throw them in, heating and crisping at the same time. Great with a couple of eggs for breaky. (and Christie you are right, there is no such thing as too many mashed taters). Sharla you need to develop a chocolate nacho recipe - I am there for it; Christie thaw your sorbet and add ginger ale, it will make a very refreshing mocktail and finally, "Man your battle stations, a pea has breached the rice perimeter!"

    Mashed potatoes are a meal in their own! Mashed potato bowl~ add a veggie, any meat, just butter, gravy... I love mashed potatoes. I will be making a few 2 person meal bags of mashed potatoes as that is a staple for us. Comfort food. I love your videos. I LOVE the journal idea! What a wonderful way to connect! We all need to write more. Even with the phone, writing is important. Write your recipes down, don't just type them. I want to hear about the cats! We have 4 inside cats and 2 outside cats, so far. OMG! I love that cat! So cute. I need a piano.

    Great ideas. I do this a little bit for my husband. He is disabled so I like to have meals ready for him to just heat and eat when I'm at work or just don't feel like cooking. I also customize some for me for work as well. We eat differently, he is a carbaholic and I try to eat ketovore or carnivore. Need to step up my game and do more of this. Hmmm....... need a trip to Wholesale Club for a bunch more containers in smaller sizes.

    Teenage boys are known for their ability to eat a lot of food.😅😅😅😅😅😅. I'm single and live alone. I really appreciate the freezer meals for one or two you have on here. I'm getting ready to start chemotherapy next week. One of the recommendations my doctor has made is eating five or six small meals a day instead of the three regular meals. I plan to use a lot freezer meals for this, along with sandwiches and stuff I have here that I just have to add water to and microwave for those meals. Most of my freezer meals I cook before I freeze them. Than all I have to do is put them in the microwave or heat them up on the top of stove depending on what they are. This helped a lot when I had surgery a couple months ago and didn't feel like cooking anything for a couple weeks after it.

    Love watching the two of you. I’ve been doing freezer meals for a while for my family and others. On the meals for one I’d suggest you add a pat of butter or ghee on top of the frozen vegetables because they aren’t seasoned. Love using muffin tins for mini quiches, meatloaves, etc..

I could not live without cheese it can go into almost all savory dishes so as much as I love chocolate cheese would win if I had to choose between them !     Freezer meals have been an AWESOME way for empty nesters to keep the meals exciting. Many have trouble making the transition from cooking for an army to cooking for one or two. This is a nice way to do it and keep the variety up. Good luck!!

    I do want to voice one concern regarding throwing a hunk of frozen meat in a crock pot. Slow cookers don’t reliably get frozen meat up to a safe temperature (above 140°F) evenly enough or quickly enough. It will likely spend too much time hovering in the danger zone (from 40°F - 140°F), which opens the door for bacterial growth leading to food poisoning. A better recommendation would be to thaw it overnight in the refrigerator first. Many of haven't eaten "risky" food without problems but why take the risk.

    When living in dorms they also have to manoeuvre round several people using the same kitchen (often not clean and tidy and dirty dishes everywhere) so prepared meals can be a life saver! However, freezer space in dorms is often very limited. My daughter got only one freezer drawer so she had to just take a few meals at a time, so be mindful if sending all the freezer food at the same time. Preparing this for home use, especially for a single person or couple can save so much headache, time, and cleaning and you get to eat a healthy variety of food. It's far too easy to get into a rut jus tffor convenience sake and lack of inspiration. if cooking a meal its always worth cooking extra portions and sticking them in the freezer!

    That is a great point about dorm room freezers! Luckily Sharla's son is in a space where there was a full sized chest freezer and it was mostly empty! He only took a few on his first trip up, so he can take more next time. And yes, individual meals can be a total lifesaver when living alone. It definitely helps keep you out of a rut.

    Super funny I was just looking on Amazon the other day and found a really tiny throwaway containers that can be meals for one or two because I think they hold up to 1 pound. Super excited plan to get them in early August! Not only for myself, but also for my children that way we could have individualized portioned meals and if it’s 16 ounces, I can go in well that can be split between one person two people or maybe even three depending on how meaty the meal is And I also just got brand new Pyrex dishes on Amazon. I ordered a ton of those because I am not a fan of Ziploc bags except for things like maybe when I make homemade breakfast burritos and I wrap them first and then put them into the Ziploc bags or if I’m doing something like homemade black bean burgers or turkey burgers, but for a little mini meatloaves and or casseroles and things of that nature, I am super excited that I just found yesterday the little tiny throwaway portion, tens on Amazon. They will totally be a staple in my meal prep moving forward we’re not a single family of one or two, but meal prepping is so much easier and so much more variety. 9:46

    In our house, our fav way to make meatballs is what we call Asian meatballs. We make a ketchup glaze like you would for meatloaf but instead of brown sugar, I add hoisin sauce to the ketchup. You could really use any sweetener and then add ginger and other Asian flavors you like. Glaze the meatball and allow the glaze to become caramelized in the oven. When ready to serve, drizzle with some form of yum yum sauce. We just mix mayo with sriracha. Sometimes we also top with sesame seeds and scallions. These are delicious and they were a big hit at a party we had.

    I started doing freezer meals because I'm on a diet. So I make big meals and put them in the same containers it is so much easier to eat healthy and not buy out and not cheating on my diet. Coming home at 5:00 pm I don't like having to rush to make food.

    I love watching your videos! Will be making things this summer. But question… do use an air fryer or do instant pot? I do rice and mashed potatoes in my ips. Game changers! And I made your meatloaf muffins and husband loved them! So delicious

    We are instant-pot adverse. Both of us. lol I (christie) now have an airfryer and am continually trying new things in it but we are both so old-school, it's hard to give up the slow cooker and our regular oven. We'll get there. Be patient. haha

    Our big meals serve 4-6 people, so our smaller portioned meals usually serve 2-3 unless you really want to take it down to meals for one like we did here.

    Christy and Charlotte I have a great recipe for you guys to try online they're called turkey burgers you grind up peppers onions and carrots cook them in olive oil let them cool add them to ground turkey with two eggs and a cup of oatmeal and garlic powder and onion powder and 2 tbsp of Worcestershire sauce coconut oil they are delicious hope you try them let me know what you think❤

    Thanks so much for the ideas for those of us who are now “empty nesters”! So helpful. On a side note I appreciate that you pronounce turmeric properly! So many cooks and most chefs skip the first “r” and call it “toomeric” so I went to 3 pronunciation websites to make sure I was pronouncing it properly. It may seem silly but when teaching we should know our subjects and I am a teacher.😊

    What I do to heat from frozen is put it on the defrost setting for a few minutes and then cook it on the regular setting.

    Hi, sorry, i have one more question. I did not see what you did with the cooked pulled pork. I think it was put into freezer bags. If the pulled pork is cooked and then frozen, what are the reheating instructions? I see the recipe online but it is just for prepping, non cooked and going straight to freezer and then the instructions for cooking it from raw.

    Just throw it in the microwave until it's hot. Alternatively, you can reheat it in a skillet on the stove. I like to add a bit of water, like a couple of tablespoons and then heat it over medium heat with the lid on.

    48 meals is crazy! That’s 24 days of premade lunch and dinner. That could last your son basically an entire month, with 6 days where he might have to go out with friends or try his best to cook 😂 Or, of course, 48 dinners.

    There is actually a deep freeze and the freezer above the fridge shared among four people. When we made the meals, we weren’t sure how much space there would be but it turns it out that there’s more than enough room.

    Just made my lunch meal prep today for work. Sloppy Joes and taco meat. I took half of the taco meat and made a taco rice dish. Perfect lunches, if I do not take food I can chose from candy or chips at work!

    Usually it just means that it needs a bit more time warming up. Stirring gently also helps.

    Sorry - just the clarify, do you mean the ground beef? It's just browned with salt and pepper. All of the minced meat in this video is beef except for eggroll in a bowl, which has minced Italian sausage in it. It comes pre-seasoned with either mild or spicy seasonings in it. I hope that helps.

    The best way to cut the sodium is to make your own broths and soups if adding it into a recipe. They are a bit sodium culprit. Jars of sauce make it hard to cook with. Nobody wants to make their own soy sauce! Sodium is a tough one. You really have to just do everything from scratch. 😕 good luck!

    Yes! When he arrived, there was a chest freezer that was essentially empty! I was able to bring even more meals to him the following month.

    It turns out there was a deep freeze there that had nothing in it so he hit the jackpot! I was able to take him even more meals the following month once we knew that space wouldn’t be an issue in the slightest.

    That is very sad to hear. We often recommend just doubling your dinner to start out. It's less of a hit for groceries. Make one dinner and then the second dinner can be divided into smaller bags or dishes for individual meals. Over time, hopefully you could save enough to do bigger sessions. Just do what you can! ❤️

    In the Dr. Pepper Pulled Pork recipe, could you please make a small correction. You refer to peppers in an “adobe” sauce. It should be an “adobo” sauce. It is consistent throughout the recipe. Thanks. I live in the heart of TexMex food country, so I guess that’s why I noticed it. I am really enjoying your web site. Several of your recipes are now safely tucked away in my recipe program. I have a lady that helps me, and she is living with her brothers. I occasionally cook up a crockpot type meal and send it home with her. She works long hours. This next week I’ll be doing this recipe for her and her brothers. I’m trying to teach her the basics of “crockpoting” and how it will save her time. I know this will be a hit with she and her brothers. Simple, yet delicious.
