    Really nice video. Kettles are great for starting in to barbecue and it's also good to get to know a pitmaster and learn from them if/when someone is ready to level up.

    Great video. Your primitive pit is impressive. I agree about the smokestack on the Yoder, specially when you need to properly render the fat cap on briskets. It ought to be easy to build a steel chamber from the inside to lower the air intake. Looking forward for your videos pertaining to the firebox and smokestack.

    Great vid and lots of good advice, MJY. I've been rocking a cheapo O Joe Highland for at least 15 years. The smoker is a complete a&&pain to run but I ALWAYS produce great BBQ with it and just can't get my head around $1-2k+ for a better smoker (although I might pull the trigger on a Brazos this year). Kettles are great, run a 22.5" Weber and get great results with that one too. I can get medium size pieces of Hickory in it and get great smoke and results with beef short ribs. While I'd love to get an SNS, I prefer to spend that scratch on better proteins. Again, really great video, solid points made - love the channel, always learn something from you, and look forward to the content and collabs. Thanks for all you do to share your knowledge with us!

    I inherited an old 18" weber kettle, and I love that old bird! And recently got a HastyBake Roughneck. I've only had 3 cooks on it, but It's been an amazing drum smoker so far.

    I love the Weber rant some one did on you, that was funny. SNS looks like they followed in the footsteps of the storied Weber Kettle which is an American classic. The 22" Weber Kettle I've been grilling with all my life, the SNS looks like the Weber and a damn good one too. Have the Weber Smokey Mountain 22.5" big version, I always cook a lot of food. Just got a Pit Boss pellet smoker, so far, I found you can cook a couple of spatchcocked chickens really fast on it, so a little smoke flavor fast the pellet is doing it really good when I don't have all day or 2. The WSM is good and I got a gateway drum smokers 55 gal rib hanging grate to swap the top grate and some pellet smoke tubes to use it to cold smoke sausages. I learned sausage making in part from Bradley Chudd's BBQ and that's where I first saw you in one of his videos. I'm looking to add an offset to the back yard, and I need some grill space, the least I do is 2 chickens, the WSM is cool but for Thanks Giving it would be nice to have the space to do 2 spatchcocked 20lb turkeys or 4 briskets at once without having meat above dripping on meat below.

    I’d love to see a video talking about the smokestack and the firebox. I have a 250 gallon Big Phil’s Smoker that’s fully insulated and I’d like to see the difference with your version. I also love my kettle grill.

    Some smokers are personal preference or more convenient depending one space or labor intensity. Good video keep it up ❤ and the only thing will make a difference in bbq is Korean newspapers

    Thanks for discussing this topic. I know you don’t own one but I think some consideration should be given to pellet smokers. In my opinion, there are some very good pellet smokers in the price range between kettle grills and backyard offsets. Camp Chef (Woodwind Pro) at the low end. Yoder and Lone Star Grills at the high end.

    I haven’t, but I wanted one when I was younger. Im afraid it’ll places in the corn unused like the WSM. I personally just don’t have a use for barrel style smokers

    Joe, Great video! Did you consider putting your 250 on a trailer? I wonder if it is worth it once you go that big. Although, then you probably can’t easily move it a short distance in your yard. I also have concerns about the popular high back yard smokers (Franklin, Mill Scale, Goldee’s/M&M) that mainly have tiny wheels. I don’t think many of these even can be made with better wheels. Do you ever think about getting a direct heat cooker like Bradley’s Chud Box? Keep up the great videos!👍

    Trailers require extra work and space. I’m happy with the size and mobility of the wagon. If I had more space for a chud box I’d get one. Haha

    I would like you to talk about traditional smokers vs reverse smokers. What has been your experience with reverse smokers, and is there a difference in food taste? Also, please talk about smoke stack placement.

    I am currently waiting for my offset smoker to be built. I've seen a lot of videos comparing uninsulated/air gap insulated/fully insulated fire boxes. It seems everyone says that the fully insulated keep in heat too well and that makes it hard to maintain a coal bed. Mine will be 150 gallon using a propane tank (like a larger version of a Fatstack 120). Interested to hear your thoughts, as this is something that can be changed.

    What are your thoughts on the Char Griller Grand Champ? I would love a Workhorse but like in Hawaii so we have are pretty limited options and shipping one from the mainland would cost almost more than the smoker. The Grand Champ looks to have some pretty nice features and with a few mods could run well but curious on your thoughts

    I haven’t cooked on one so I couldn’t tell you. Sorry. But if that’s the one that’s call you and you wanna learn to cook on an offset, why not! I cooked my cheap broken smoker for years and learned alot using it until I felt confident pulling the trigger on a more expensive one.

    I love both the Weber and the SNS, they are both legends and I will always own at least one or the other. MJY, screw the haters that talk out their a$$. Your credentials speak for themselves, and you should never listen to anyone that you don’t already know in your BBQ circle.

    I have a Yoder Pellet and a WSM; I'd love a stickbruner, but it doesn't seem practical for backyard BBQ. It seems like an SNS would be a good complement for high temps and charcol. You can smoke pulled pork / brisket, etc?

    @@knoxavebbq got it. I have seen you do cool things on the SNS I think I am going to get it. I make briskets on WSM and I think its the same size. Your video doesn't really recommend a backyard offset. What about the Babe or the 1957?

    Hey Joe, I bought a char griller grand champ from Home Depot and it’s actually pretty nice for the price point. Academy sells old country pits that seem quality especially with their new G2 pit. Have you cooked on the char griller grand champ? I think you’d recommend it to backyard cooks, especially since it’s only like $600. I also want to get an old country pit and see how nice those are

    Sounds good. Honestly I wouldn’t be able to answer your question confidently since I have never personally cook on them. As long as you’re happy with it and you know how it runs that’s all that matters. I would just do your homework before you purchase it. Thanks for watching.

    This is a great video. I’m glad and upset at the same time. I have the Sns grill. Bbq is good. I also have a ground cement pit. Bbq is good. I’ve been to restaurants with a off-set and the food was not so good. With bbq I have off days. I over cook something. I did not season properly. I over smoked something. I should have left it on longer. My question is. If you only have to cook for you? No friends or family or enemies. Which one would be your go to? My reason is. I can fry chicken. I can bake chicken. I can grill chicken. Something about that slow cooked chicken with apple, oak, cherry wood. I can’t explain!!!! 3-4 hour chicken wings cannot be matched. If you cook it just right? You are at 200F for most of your cook and then 300F until the skin is crispy. No sauce needed. I can’t do the same on the ground pit. The Sns can not cook whole hog.

    Kinda doing a disservice by not talking about kamado grills. They hold temp well at -10°f with snow and driving winds. They can grill hotter than any Webber. They make better smoke than a WSM or Kettle. Some brands have a plethora of accessories. They only fall short on delivering GREAT BBQ smoke and mobility.

    @@knoxavebbq what is your top 5 at the moment? Really surprise moberg is not one of your favorite. Many of us don’t get to cook on many pitts like you, any insights you give is very helpful. For me shierly fabrication is my major step up from store pitts and probably my last. Maybe get a direct flow in the future but so many options

    To me it doesn’t really matter unless you’re cooking as a restaurant lmao. You can get the same quality on a 1965 Weber as a $9000 cooker pretty much
