Butter Chicken Mandi
Haters are going to say it’s butter chicken curry and pulao , don’t get discouraged to try it out ….. tho was hit among my friends and they said it tasted just like mandi 🥰🙌🏻
Butter Chicken
For chicken
Chicken - 400 gm
Ginger garlic paste -1/2 tbs
Cardamom powder-1/2 tsp
Cinnamon powder-1/2 tsp
Cumin powder -1/2 tsp
Red Chili powder-1/2 tbs
Coriander powder-1/2 tbs
Saffron -1 pinch
Turmeric-1 tsp
Garam masala -1 tsp
Pepper powder -1 tsp
Marinate and pan fry or air fry
For gravy
Dry spices -1/2 tbs (mix of cumin , pepper , cardamom, bay leaf, cinnamon)
Onion-1 chopped
Ginger garlic paste -1 tsp
Green chili -2 chopped
Red chili powder-1/2 tbs
Turmeric -1 tsp
Chicken cube -1
Cardamom pwdr-1 tsp
Garam masala -1 tsp
Tomato paste -1 tbs
Pepper -1 tsp
Kasuri Methi -1 tbs
Cream -1/5 cup (or milk or cashew paste)
Honey -1 tsp
Red color optional
Salt
Butter -3 tbs
To butter add dry spices, sauté onion , ginger garlic paste , green chili , all spice powder, cube , tomato paste , kasuri Methi , chicken , cream and honey and mix well . Smoke the butter chicken with a charcoal for flavour .
Rice
Rice -2 cup sella basmathi rice wash and soak in water
Mandi masala -1 tbs
Coriander seeds -1 tsp crushed
Cumin -1 tsp
Pepper whole -1 tsp
Cardamom-3
Cinnamon -1 pc
Dry lemon -1
Chicken cube -2 dissolved in 1 cup water
Water -3 cup boiling
Saffron-1 tsp dissolved in 4 tbs water
Green chili -2
Salt
Oil or ghee -2 -3 tbs
To a pan add oil , fry dry spices , dry lemon , add the rice , Mandi masala and fry .
Pour boiling water and stock water , add salt if required , cover , boil and cook . Cook till it’s 80 % then make some holes with spoon and pour the saffron water over, add the green chili on top. Place the charcoal to smoke on top of the rice close with foil and lid and put in dumm low sim fire for 10-15 min in low sim fire . And your smoked Mandi is ready .
Mandi Masala
Cumin - 2 tsp
Pepper -1 tbs
Chicken cube -1
Dry lemon -1
Cardamom-3 pc
Cinnamon-1 pc
Coriander seeds-1 tsp
Garam masala -2 tsp
Msg -1 tsp (optional)
Grind spices to a fine powder and use whenever required or use store bought Mandi masala .
