Easy Neypathiri/ Neypathal with Puttu Podi .
I have tried this recipe with @kitchentreasuresofficial puttu podi and also with Ajmi puttu podi . Both are steamed rice powder and little coarse in texture .
You could also make it with normal rice powder or aamis rice powder or even by grinding rice .
Puttu podi requires nice amount of water to knead .
Key to look into for this bread/ roti / pathiri not to be soggy oily is to knead it well , roll without cracks , flatten to semi thick discs and to deep fry in warm oil . Rice powder to rice powder the pathiri might be white or light brown when you fry .
If you plan to have as a snack for tea you can make it more thick and smaller in size , also can add crushed green chili and black jeera (Karinjeerakam ) also in the dough .
Puttu podi -1 cup
Water-1.5 cup (hot water or more)
Oil-2 tbs
For Coconut Paste
Coconut -1/2 cup
Shallots -5-6
Curry leaves -2-4
Ginger -1 small pc
Fennel seeds -1 tsp
Salt
Grind all to a paste
Oil to deep fry
To rice powder add the coconut paste , oil and water and mix and cover and allow dough to rest for 10 min . Then knead into nice soft dough . Incase it’s too tight add more water and if it’s too loose add some all purpose flour or rice flour . Flatten with your palm or with greased plate . It should be semi thick pathiri (roti ) and without cracks . If any crack just knead the dough again well .
And deep fry in oil Z be sure the oil is very warm and then reduce to medium flame and fry . Fry one side and it will puff up and fry other side if your oil is not warm enough it will fry but will be white in color so be sure oil is warm enough
