* $30 BUDGET * vegan what i eat in a week - ( full grocery haul + simple & easy meals )

Hi friends! 🌞 So excited to share this $30 budget what i eat in a week video! I wanted to show you a full grocery haul on everything i got and show you all the recipes I made with those ingredients! These meals are simple and easy to throw together but still nourishing and delicious!
My heart goes out to everyone struggling with money and to put food on the table. Remember there is no shame in not being able to afford food, the world is a difficult place. However there are food banks, soup kitchens and other resources available that can help you!

Pickled Red Onion Recipe:
• spend the day in the k...
Carrot Soup Recipe:
10 medium - large carrots
1/2 can coconut milk
2 cups water
1 tbsp olive oil
2 tsp salt
1 tsp black pepper ( more to taste )
2 tsp onion powder
1 tsp garlic powder
1 tsp cinnamon
1/8 tsp clove
1/4 tsp fennel
8-10 whole coriander seeds
1 tsp turmeric
1/4 tsp nutmeg
1 tsp cumin
1/4 lemon
1 - 2 tbsp maple syrup ( optional : sub sugar, coconut sugar or even molasses )
- Preheat oven to 400F. Wash and peel your carrots.
- Place your carrots into a large baking dish and cover with oil, 1 tsp salt and pepper. Using your hands rub that into the carrots and then place in the oven for 30-35 minutes or until carrots are completely tender
- Once carrots are cooked place into your high powered blender with coconut milk, all spices, lemon and maple syrup. Blend until completely smooth ( 3-4 minutes )
- transfer into a pot and warm threw. Plate and top with cilantro, red onion, croutons ( if you have them ), coconut yogurt or whatever else you think would be delicious!
Hummus Recipe:
1/2 can chickpeas ( take the skins off, it makes a creamier hummus )
3 cloves garlic
2 tbsp olive oil
1/2 lemon juice
3-4 tbsp aquafaba ( juice in the can of chickpeas )
1 tsp salt
1 tsp onion powder
chilli flakes to taste
Warm a pan on very low heat, add olive oil. Using the side of a knife smash the garlic open and peel away the skin. Place in the pan with the olive oil and cook for 10-15 minutes or until garlic slightly browns and is very fragrant
Place all ingredients including the olive garlic mixture into a high powered blender and blend until smooth ( add more aquafaba as needed )

    Avocados grow in my state so they’re pretty cheap (about $0.50 per avocado is their normal price but a bit less if you buy a bag full) so it’s always wild to think about how much more expensive they are in states where they can’t grow

    I honestly feel really bad for people who can't afford food... Thankfully, I have never been in that position and have always had food around me to fuel my body... And honestly, this video just makes me realize how lucky I am.

    I wouldn't feel sorry for the food in this video. People seem to think foods are only good if you add a mass of stuff. When cooking from scratch is the best and cheapest way rather than relying on expensive, greasy, high salt packaged items to make the food taste better. Try sticking to a budget it make you so creative and a better cook.

    A cool tip my grandfather showed me about burping sauerkraut and fermented wines, was to add a balloon or nitrile glove to the lid of the jar so it never explodes, and you can visibly see when it needs to release it's gas. Thought I'd share :) Thanks for the helpful video, it gave me some new ideas!

    Finally someone who eats real meals with normal ingredients, lol thank you! I’m in Canada too and while some of the prices do compare some of your ingredients are cheaper which is interesting. But I love that these are meals and tips I would actually eat/use! Thank you for showing how practical and delicious a small budget can be when you’re vegan!

    I loved this video! I especially appreciate how you showed the cost of each item in the beginning. Most of the "on a budget" meal inspo videos I watch don't show the actual prices of the ingredients. They do this weird thing where they divide the whole cost into serving sizes, if that makes sense. So I absolutely loved this!

    I absolutely love your heart and how compassionate you feel about the disenfranchised, homeless. Food is a basic necessity along with housing. It shouldn't just be for those who can afford it. We shouldn't have to settle for crappy processed food because we can't afford organic. Amen girl!

    I love this video because even though I'm not limited with what I buy, I don't have the ability to purchase more expensive items like maple syrup or nutritional yeast on the regular. This helps me to see some realistic recipes I can make for me and my husband who prefer to keep our grocery budget within a set range. Thanks for the inspo!

    Hot tip for the chickpeas: throw them in a pot of water and then rub them between your hands. The peel and chickpeas will separate, making the process way quicker!

    You really came up with some excellent ideas in this video, totally different to most. No stupidly expensive additives or ingredients that are unsustainable in the long run.     absolutely loved this video! :) As an international student, one thing that's helped me keep tabs on my budget but also calorie intake is - cabbage, beans, lentist & rice I usually meal prep lots of high protein, high fiber salads & also some kind of daal/ lentil soup This lets me afford more fruit & veggies. It's also super cheap to buy sauces/pastes to up the taste of daily foods so that meal prep doesn't boring - vegan mayos, vegan butter, hot sauces, Gochugaru, miso paste, soy sauce I usually use this to turn my salads/rice bowls into burritos. :)

    4:30 Overall, this haul was actually super interesting to me. Living in Europe (Poland more specifically) I find completely different products expensive or cheap! Plus, obviously 1CAD is not equivalent to 1PLN, the costs of living are different and the amount you earn too. A really valuable insight! Thank you!

    Great video! I like that you used some of what you had and had some of what you bought left over. It’s a more realistic portrayal of eating on a budget. And I LOVE how produce-based this was. I am trying to avoid gluten and dairy. I lean toward a pescatarian diet, but I occasionally eat meat (like on holidays). Most weeknight meals for me are vegetarian. And I am also trying to avoid coffee but failing. 🤣

    So I learned recently that people in the U.S. only spend about 6% of their income on food which is the LOWEST in developed countries. That really put some things into perspective for me. The U.S. seems to be so consumer-based and we buy so many things we don't NEED, maybe we want but don't NEED, and end up slacking on our food sources which leads us to buy cheaper more processed foods or avoiding organic foods. Idk this was just a realization for my cheap self to STOP FEELING GUILTY for spending money on food. These healthy/whole plant foods are the building blocks of my body so I SHOULD invest in my health this way. Edit: it's all about priorities and money management I guess. I definitely have given up things so I could have more whole foods in my diet. There is a trade-off but I know for me if I don't take careful care of my body it can spiral very quickly into a dark place (mentally and physically) that takes more to get back out than just making the healthy decision in the first place.

    I’m in America and I spend a lot of my income on food. But I know that could probably be rare. I make 95% of my meals so I buy quality, Whole Foods. I’m recently on a smaller budget and I’m finding it would be cheaper to buy ready made, processed foods but my stomach can’t handle those :/

    Noted down some of these meals to try! Where I am in Canada, we spend at least half of the year in the snow and with REALLY expensive produce (like a $3 cucumber or $7 for 2 bell peppers). I lived with some girls from Cali during my degree, and they were HORRIFIED at how much I used frozen/canned veggies, but they had never thought about living in places where tons of fresh veggies weren't always available.

    julia, youre allowed to have coffee. you dont have to be perfect. sometimes the things we like to eat/drink arent healthy, and it happens and its ok.

    2:44 Last year I went on the farmers market on my birthday and bought myself 3 bunches of kale (green and purple) and honestly, it was the best "bouquet" I ever got. Good I don't have to stick to it only being for special occasion :D And honestly, I would 100% want a mostly edible bouquet if I get married - so much more practical plus its simply super cute!

    Hello, love your video! For the sweet potato gnocchi, stead of oat flour you should use cassava flour. It works very well.
