Chickpea salad:
1 + 1/2 cup boiled chickpeas (360g)
1 + 1/2 cup boiled lentils (300g)
1/2 red onion
1/2 red bell pepper
1 stalk of celery
1 carrot
3 pickled cucumbers
2 teaspoons capers
A few sprigs of dill
2 tablespoons olive oil
The juice of half a lemon
1/2 teaspoon salt
1/2 teaspoon ground pepper
Chickpea soup:
2 tablespoons of olive oil
1 large onion
2 cloves of garlic
2 carrots
2 stalks of celery
1/2 bell pepper
1 teaspoon salt
1 teaspoon vegetable
1 teaspoon chili flakes
1 teaspoon ground cumin
1/2 teaspoon pepper
3 bay leaves
550 g of boiled chickpeas
400 g chopped tomatoes (canned)
1 liter or 1 half liter of water
Fresh green parsley
Juice of half a lemon
Chickpea Curry:
1 tablespoon olive oil
1 medium onion, finely chopped
5 cloves of garlic, finely chopped
1 tablespoon freshly grated ginger
2 teaspoons curry powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
1 teaspoon turmeric
1/2 teaspoon chili powder (optional, to taste)
1/4 teaspoon ground black pepper
1 red bell pepper, diced
600 g of boiled chickpeas
400 ml of coconut milk
200-300 ml of water
100 g fresh spinach
1 bunch parsley or green coriander, chopped
