25 दिन की मलाई से बनाएं मक्खन/दानेदार घी और पनीर | बची छाछ से पनीर Butter, Ghee & Paneer from Malai
It is our routine to separate and store cream/malai from milk we use on daily basis. We have a subscription of 1 litre full fat buffalo milk and the amount of malai you see in the video (3 boxes) is gathered in around 25 days.
This total quantity of malai fetched me a total 1.25 kg butter which was later clarified to 920 gm ghee/clarified butter. The byproduct of this process, the butter milk, is something that we use to make the fresh paneer which weighed 225 gm. To sum it up, if you consume 1 litre of milk daily, as byproduct you can produce around 1.5 kg butter or 1 kg ghee & approximately 250 gm of paneer. And the best part is the process of making is very hygienic and cost effective. You need not worry about any preservatives or adulteration anymore.

Depends on the type of milk purchased. Low fat milk will not give much malai .

If you have access to a tabela/gaushala... Buying fresh milk directly from there should give good malai. Otherwise you need to look for high fat milk packets

Amul A2 Buffalo Milk, iska packet white and navy blue color ka hota hai, and upar navy blue buffalo bani hoti hai and A2 Milk aisa likha hota hai. Ye daily supply type ka pouch aata hai, not tetra pack.. Ise dheemi aanch par garam hone de aur fir bina dhake poori tarah thanda hone dein. Fridge mein bhi jali ka dhakkan rakhe. Fir moti malai aati hai..

But doesn’t the malai for so many days get bad? How do you avoid that mine gets smelly and yellowish

Hello, you need to keep malai in the freezer. It doesn't go bad in the freezer and the butter also tastes delicious. In fact no bad or sour smell while making butter..

Hi 😮beater ja to thik h. Lekin makhani se kiya to usame itane thodi der me say ka chota tukada rahata h kya? Qn ki usako khatta dahi dal ke fermented nahi kiya h. To ye cream h halaka khatta malhhan nahi hoga . Fermentation ke baad usame bacteria achhe rahate h. Mai isame dahi dal ke usaka pura dahi jamati hu. Phir ghee banate vakta gud aur thoda namak dalana to granules ke saath ghee babata h. Mslai bhi mai simple fridge ne rakhati hun 15 din ke liye. Deep freeze me nahi. Bass ayurved ka socho to ferment karana. Baki Bahot kashta utha liya

Hello aunty, kaise ho? Thank you for sharing your experience. Ismein malai freezer mein rakhne ki wajah se bilkul bhi kharab nahi hoti, na koi smell aati hai. Makkhan bhi ekdum tasty banta hai. Meri mummy pehle dahi dalkar banaya karti thi, fir unhone malai freezer mein rakhkar banana start kiya, bas wahi follow kiya hai☺️

Milk dheemi aanch par garam hone dein aur ufanne se pehle gas band kar dein. Bina dhake thanda hone dein aur fir jali wala dhakka rakh kar fridge mein thanda hone dein. Achhi malai aati hai.
