I was lucky to find 2 excellent dishes on this hunt. The Cambodian style rice noodle soup was absolutely excellent. The broth was super flavorful and filled with tons of unique vegetables, i will definitely be back. I have tried Kho Quet, the fatty, salty, sweet fish sauce with boiled vegetables before but have never had it with the "burnt rice." It was truly delicious and is a new favorite now.

Only in Vietnam do you get such a gorgeous array of fresh herbs --a feast for the eyes!
Wow, I love the way that they have a lot of vegie for the " HU TIU" and the guy serving "BANH MI" was so caring and very sanitary and hygienic !!!

When it's "clean" in Vietnam.. 90% of the time it's not good lol
With every video of yours that I watch, the urge to learn Vietnamese and speak and eat with the locals, growths huge.

It always surprises me the amount of veggies in all the dishes. Here in the U.S. you never see that in everyday life.

Com chay kho quet is soooo good, my mouth is watering
The flower in the (the yellow bulb in the salad bowl) that was offered along with your Bún cá is called "điêng điểng" flower. It's a type of wild flower in Vietnam that's pretty close in relation to "mướp" or Vietnamese cucumber. It's rather cheap and is a staple in the western region of the South. It's an acquired taste though, so unless you have no other vegetable, it's best mixed with other vegetable. However, it's excellent with Vietnamese western region style sour soup (or canh chua), because of it's slightly bitter but refreshing taste.
Vietnamese foods are probably the only foods that use flowers as vegetables, and they taste delicious. Have you ever tried Vietnamese Vegan Banh Mi? It takes as delicious as the meat one.

Actually, other nations use flowers in dishes, in particular in Europe.

I grow edible flowers and sometimes buy them at the farmers market here in Canada. They really add to an eating experience.

Chad, that yellow flowers/bulbs @ Bún Cambuchia are signature vegetables in the Mekong Delta area "Miền Tây". They are must-haves in Bún & Bánh Xèo. Their name is " Bông Điên Điễn"

That last dish looked amazing! I would have been tempted to make little burnt rice/boiled veggie tacos and used that spicy sauce as salsa. Was that mudfish from the turmeric soup catfish?
The first dish I usually call BÚN CÁ not HỦ TÍU but anyway thank you for loving Vietnamese food, there are lots of more food you need to try :D

Last dish looks amazing. Never seen that before. Reminds me of the caramelized catfish Viet or Chinese dish.
