2 Michelin Star Recipe! Jungsik Restaurant's Famous Octopus Dish!
Today, I made a recipe from Restaurant Jungsik, a 2 Michelin-star restaurant in New York and Seoul that sells Korean-inspired cuisine! It's a restaurant that I always looked up to since the beginning of my career, and I finally get to try one of their classic recipe, their Octopus!
This dish was lightly crispy, tender on the inside, and combined with this insane sauce, was whole another experience! It actually brought me back to a dish I used to eat a lot as a kid, a type of deep-fried squid.
It always made me kind of sad reading comments like 'this is not Korean food', in the video that showcases Jungsik's dishes, and I can tell from actually trying that it really does remind me of Korean dishes I used to have as a kid!

Looks amazing, but did you peel the skin of the octopus? Looks like the purple skin is off on the sides of the tentacle at 2:54. Wondering if this is a different type of octopus from what I can find, or you peeled it.

I usually like to peel if, but Jungsik restaurant didn't so I just have it without peeling it. From what I felt, the skin creates a layer of crispiness after frying, alost like fried chicken. So I think they intended to leave it for a reason. Thank you for watching 🙏

Nicely done. I was very curious what the sauce was made of as I have a similar concept for a dish, thank you! You should stage for them, I am sure they would take you on :) .

Yes they were exactly that hahahah :)
I think if you massaged the octopus with cornstarch and salt for 10 to 20 min it would’ve been extremely tender

Whoever gave the two stars to the dish, which is basically one fried octopus tentacle with some mayo, is a complete a..hole and fraudster. The entire entire industry is a complete scam. Beside that, props to you for your cooking and editing style.

Thats why M. P. White gave away all his michelin stars and stated " you sell tires,i sell food". Look him up and you will see alot of his insights how a michelin star is obtained and what comes with it. Highly suggest any of his books

It is true that the Michelin guide have a lot of controversy. At the end of the day, their guidelines for star just judges them on food, so even if it's 'just one fried octopus tentacle with mayo', if it tastes good to them, they can give how many stars they think it deserves haha. It is kind of ironic to begin with, to try to be objective on flavor when it is a complete subjective topic for sure.
