    It's great to see a candy company keeping the old skills and machinery as a main part of their production. As a Brit it's also been really informative as to how sticks of rock (candy cane in US) are made and how they get those intricate patterns. Makes me nostalgic for the holidays spent at the seaside finishing in a giftshop full of hardboiled sweets/sticks of rock.

    I got the image variety pack as a gift when I moved in to college and the blueberry was in it. It is so good and the citric acid really adds another dimension. I had always heard Greg talk about the air bubbles and how they help with it dissolve faster but you really have to experience it to truly understand how it impacts the flavor and texture. Normally I don’t like blueberry flavored things, but these are some of my favorites that came in the bag!

    Blowing In The Wind as sound track while listening to candy making process... Greg, I've been watching your channel since 2015, my first visit to Lofty at Tallahassee in 2017 with my kids, and first time I've ever cried over sweets. Hard candy was magical to my childhood, from prom dates to picnics did I settle a couple of bags with the people I cherish. My family will settle for a visit again once my condition is better. Many loves from me, my wife and daughters at Madison, WI.

    That pigment is pH-sensitive. Using juice from red cabbage you can make pretty much a full-range pH indicator liquid. I don't think it is used in pH papers though because it can't be fixed to the paper and so would run when it was used for testing the pH of another liquid.

    Where I live and grew up, blueberries were never rare. Summer was blueberry pie season. I never thought of them as local. Of course, I live in Southern Ontario, and wild blueberries are sold at roadside stands all through the Muskoka region in July - August.

    This is interesting. Two new things popped out to me. One, this is, I believe, the first time that you've talked some about the thermodynamics of heat in the candy. Also, I believe that this is also the first video of any hard candy making where your puller was not wearing any type of thermal glove protection. When he was forming and cutting, no gloves. I mean, it looked like he was wearing either latex or vinyl gloves that were a size to big for him. I.e. they looked loose. I'm going to guess that he can wash pots like an old friend that I worked with. She kept her pot water near scalding. Or, that he can work with the intricacies of heat in the process. Like he's got a built in infeared thermometer in his fingers.

    I know I'm an idiot for saying this, but that liquid food coloring looks just like it could be used to write with in a cheap fountain pen. Cheap, because you don't want to ruin a good pen. But I have used food coloring before to write with, and it does work. And it's cheaper that real ink... I'm in The Netherlands though, and I don't know how to get my hands on a bottle like that. Nice video guys, ty.

    I completely agree that ANY container of fresh blueberries is a single serving size. Fortunately we have a great U Pick farm nearby where we can make a day of it and pick them by the multiple pounds for a very reasonable price 😂💙🫐
