cooking for my arthritis using an anti-inflammatory diet
Ingredients:
750g parsnips, peeled and cut into chunks
Side note: High in fibre and a good source of vitamin C.
500g broccoli
Side note: Rich in vitamins K and C, a good source of folate (folic acid) and also provides potassium, fibre.
60g dried cranberries
Side note: Often associated with antioxidant properties.
60g cashew nuts
Side note: Good fats, magnesium, and antioxidants.
Dressing:
4 tablespoons honey
Side note: Offers antioxidants.
3 tablespoons Dijon mustard
3 tablespoons olive oil
Side note: High in monounsaturated fats, beneficial for heart health.
Additional:
Coconut oil for cooking
Side note: Contains MCTs which may support metabolism.
Salt and black pepper to season
