    I've been making mine with 1oz/pint of reduced fat cream cheese as the fat source and it works perfectly. Also, you gotta do more than just vanilla extract to get a complex vanilla flavor. I'm onto making 10 pint batches and at that size I'm doing vanilla extract, vanilla pudding, vanilla protein powder, vanilla almond milk, vanilla bean powder. Just like when you mix xanthum and guar you get a better result, mixing all these artificial/natural vanilla flavors makes for a real depth of flavor that extract alone cannot touch. In reality you need egg yolk for a truly rich flavor but I'm just not going to eat raw egg yolks all year round.

  • @Exercise4CheatMeals

    @Exercise4CheatMeals

    Жыл бұрын

    I agree with some of your points and disagree with some. I agree an egg yolk being an emulsifier bring a great consistency, possibly even unmatched. I think cream cheese would also work well as an added fat to make the ice cream even creamier. I disagree that you need more than vanilla extract. I researched tons of vanilla ice cream recipes before testing and either only vanilla extract was used or both extract and vanilla beans were used. Using fake vanilla flavorings like protein powders, pudding mixes, and vanilla almond milk would take away from the pure vanilla flavor you get from an extract.

    Great video, Nick! Just picked up my own Creami and it is an absolute game changer. I don’t doubt that the xanthan gum take these to the next level BUT I will say that I have made 7 or so pints without it and they are still incredible. • @Exercise4CheatMeals

    They are definitely good still, but i promise you the xanthan gum takes it to the next level or even the level above imo. Does store bought items with gums in it affect your stomach? I would put money that there is at least a gram of some sort of gum in a pint of any store bought ice cream and in that low of an amount doesnt mess with anyones stomach. To my surprise nearly everything liquid at the store has some sort of gum in the ingredient list. Thank you for the feedback Vasnik!

    Nick, suggestion for the future: after you weight the dry ingredients, if you want to avoid spillage, put them in the centre of a baking paper sheet. Then, when you need to add them, fold the sheet in half by bringing together opposite edges (as simple as that, you don't need to create a central crease) and tilt the sheet towards the mixing bowl, letting the dry ingredients slide. This is also useful when you sieve dry ingredients, to avoid spillage and to allow more speed: just prepare the baking sheet paper and do it on the centre. After you are done, you can still reuse the sheet. Important: don't use your silicon sheet, it needs to be a baking *paper* sheet. These are tricks used in pastry shops' laboratories.

  • @Exercise4CheatMeals

    Hey Federico! Of course I tried using a bigger bowl for the video and had some dry ingredients spill over, but I never had an issue when testing in my kitchen. I do think that the baking sheet is a good idea though for really foolproofing the process!

    Recently I got my hands on a Ninja Creami for rather low money and I tried your recipe (more or less, obviously I can't source the exact same ingredients). It is awesome. It is lifechanging! 165g 1,5% fat milk and 265g almond milk is the base. Then I add different flavour pastes. Tonka, vanilla, banana, coconut, even irish cream. The icecream is unbelievably creamy and milky. It tastes better than most (if not all) regular soft serve icecreames I tasted with a fraction of the calories. It's even better than my favorite low calorie icecreames from the market. ("Meucci", kind of like Halo Top but way cheaper). The Ninja Creami is the best piece of kitchen technology I ever bought.

Since then I've eaten at least one pint daily. I like to incorporate protein powder into mine but am curious if you've tried that. I'll usually use 8 oz of base liquid/almost milk or Fairlife, aand about 113 grams of cottage cheese or sometimes substitute half a protein RTD and scoop of protein powder. I'd be curious how you would incorporate the powder.

    I havent used protein powder yet (well once, but not truly tried testing it) However I will definitely be putting out protein creami creams in the future. There is no doubt about it. For me, since the cottage cheese has less volume and same protein as real milk and real milk is what ice cream is made of i just stick with fairlife, but i may have to try the cottage cheese soon just to see what all the hype is about

  • @ssholum

    Finally got around to making the vanilla base from this video. I only had fat-free Fairlife, so I added fat from heavy cream. Messed up the ratio (somehow decided I needed to replace 15g of the milk with cream... like 3.5x what it should have been), but each pint of vanilla is still under 150kcal. Next time I'll try with the fat ratio from the recipe to see if the texture is effected too much. Flavor is top notch. I used vanilla flavored almond milk (all they had at Costco that day), and kept the vanilla extract the same; perfect amount of vanilla for a plain vanilla icecream (not sure how it would do with the mix-ins). I also want to try completing one of the actual cereal flavors (probably CTC). Of course, I'd love to see if there's a way to give it a bit more protein, but the amount of icecream goodness with such low calories already makes this an excellent treat, even on a diet! Great job, Nick!

    While I think you can still make a decent tasting ice cream with it, I think there is a reason for hundreds of years ice cream has been made with milk and cream. Through numerous tests there is a very obvious difference even between skim and 1% milk. Plus 240g is 100 calories 13 protein while for cottage cheese 1% is 113g for 80 calories 12 protein, making it an easy choice. Not only is milk time tested but you get double the volume for only 20 more calories.

    Thanks for all of these great recipes! I guess there is no issue leaving pints longer than 24 hours since frozen is frozen but what about after you have mixed assuming you don't eat the whole pint. Do you put back in the freezer and respin. Does it taste the same if you do that or does it lose something? I'm considering buying one of these. One other thing, I'm in Canada and it looks like if I hit your affiliate link it goes to the US site. I'd give you the affiliate sale if I could but I don't see a way to do this

    Not sure how the canada amazon works. I figured amazon wouldnt make the affiliate l links that complicated. Not a big deal, but I definitely appreciate you trying to support. Thank you. As far as respinning a half frozen pint, I usually add a little milk to the top, but i havent found a great way to do this yet in general. Imo the respun half pint is like 70-80% of what it was when first spun. That is still good but not great.

    @@toddpeterson5226 It's fine. Actually I kinda figured it out - I use a regular tea/coffee sweetner that you can get basically in every store. This works too. Actually anything works that has a sweet taste and no calories in XD Also I figured out how to make ice cream of a thick consistency without using Xandan gum or even protein powder. You simply use frozen cauliflower, microwave it 30 seconds to 1 minute and put it in a food processor or blender. Then I usually add Skyr yoghurt or fat free greek yoghurt and frozen fruits like strawberries or cherries for the taste. Yes, I occasionally use protein powder, but rarely. First it adds up more calories with basically no volume and I can replace the sweet taste with the sweetner that has 0 calories as I mentioned before.

    Creami is a game changer, period. Even for "normal" ie quick but more sugar ice creams vs a compressor setup. But for protein/healthier, pry best kitchen gadget in years I've been eating a serving like twice a day and even with full fat fairlife milk, and cottage cheese and whey etc, I'll do like 3 servings per container and usually around 140-170 mark for calories and 20g of protein and taste amazing. Made one a lil higher in cals other day but added Trader Joe's Cookie Butter. About to make a red velvet "protein" variant of my birthday cake, some cream cheese and have Lorann Red Velvet emulsion. I'll also say I've been playing around and side by sides and I stopped using xantham or guar by themselves or together. I use whole Fairlife Milk and Cottage cheese etc and that works excellent w/o either as it acts like a binder anyway. Instead of using machine again each time, I usually leave container sit out for about 20 min on counter and that allows perfectly scooped yumminess vs respining each time and having to clean the other mixing holder. I also stopped using Alluose, I didn't see a difference in ice even with more fruit and not protein bases, and it taste, f'n odd to me lol. Usually just use granulated sucralose. Never heard of Pure Came, looks like a new brand? Gunna try some as it seems others way prefer it over others as I'm not a big fan of artifical sweeteners minus sucralose.

    So when you re-use the same pint you just leave it out for 20 minutes? Does it taste more or less the same as when you originally spun and mix it? • @surfminion

    @surfminion

    Жыл бұрын

    @@roygon so I'll usually do the main spin (obviously) and a repin if too powdery (depends on recipe, had some perfect after 1st spin). What I've found though is generally respin makes it too creamy in sense of kinda melted soft serve. So I'm finding I prefer just sitting out for that time and than scooping X portion, maybe a tad icier sometimes but still excellent. And the birthday cake one I did, I just took the last portion and after 20 min was basically just like ice cream in hardness/texture and no iciness. Easier imo than running the machine each time daily for serving, that would annoy me lol I also use a double wall metal bowl from Amazon, huge difference. As Creami mixtures will melt faster than normal, so in double wall bowl last a lot longer. Think it was like 12 bucks on Amazon But also I'm using PES whey, whole milk Fairlife, cottage cheese etc so mine is already going to be on the creamy and fatty side vs the people trying to do full pints with only almond milk etc I don't think that would work as well leaving out.

    1. Trader Joes cookie butter is the 🐐 2. Red velvet cream has been on my list for forever and sounds extremely delicious. 3. I hear cottage cheese already has xanthan gum, maybe thats why it binds so well. I tried sides by sides without it, blind taste test and the ice crystals were sooooo apparent even with all 2% milk so I knew xanthan gum was the way to go. Side by side guar gum wasn't up to standard against xanthan gum either. I seen on the facebook page alot of people use almond milk and allulose and real dont understand it as allulose is as easily tolerated by the GI as erythritol and erythritol is by far the most tolerated by far and in the highest amounts. Sucralose is just hard unless u have the packets which contain up to 3 calories per packet because sucralose is so sweet you have to have a very precise scale and weigh out so little. Thanks for the comment. It helps people get some ideas. Let me know what you think of Purecane
