Because of you I asked my son to purchase some Korean ingredients for me. He lives near a city with a huge southeast Asian population. I live in a very tiny town 100 miles from any big city. So for my birthday last year he gave me this lovely gift of flavourful ingredients. I have been enjoying cooking your lovely dishes ever since. You and Claire make my day with your cheerful, upbeat presentations. Thanks for all of your hard work. Your book is on my Christmas wish list.

Small town country person here too! I love cooking Asian cuisine as I'm Japanese on my Mom's side. It's a HUGE deal driving to the city. I go about once a year to stock up on my favorite Asian ingredients. It's a pricey journey, but is so worth it to be able to make dishes like this at home! Happy cooking!

I’m a gardener in Missouri and this is basically how I make Japchae a couple of times a month. I use whatever veggies are in season and either chicken or pork and the noodles come together quickly. I keep tons of the rice noodles on hand because they are convenient to use. It’s always a hit with my husband.

I'm an Australian, who loves Korean food (my local Korean restaurant loves me!). Last night I made the Japchae. Oh my goodness, it was absolutely delicious!!!! I'd never had that before, but I absolutely loved it. Even better that I cooked it myself. I didn't have enough chives, and had used all my spinach for lunch, so added bok choy instead. It worked really well. I could have added a little bit more sesame oil at the end (I love sesame), but it was still a perfect result. Thank you!

I love bok choy for its bitterness. It pairs really will with any meal that has a hint of sweetness like black bean sauce meals. If you ever have fresh mint lying around try it with any Asian dish. It pairs so well with so many of them. I also put it in tomato based sauces such as marinara, bolognese, chili.

From what I heard, cilantro tasting like soap is genetic. If it makes you feel better it's the same for me, my ex-hatband and our two daughters. I you ever watch basics with Babish, he has the same problem as well. If a recipe calls for cilantro, you can replace it with parsley.

You don't need to put them in your fridge cus most of it is fermented or is on an Oil based sauce like sambal or brandal, the cooking wine has alcohol in it and sits next to all my Asian inspired sauces an other good stuff. I have a whole pantry kabinet full and no of these things are gone bad ever. I even ignore the expiry date on closed jars, is just there for the form of it and to estemate the point it can go bad on you. Just use your senses to smell and look at the color.😊

If I hurt your feelings I'm sorry I know some people will get offended over that. But all in all, you are awesome👊🏼😎. Maybe I'll just close my eyes when you dump things into your pot, keep my ears open😉👌🏼😄. I'd love to try your recipes someday. Gotta love how he pretends there's a low amount of ingredient needed... Than shows up there's like 20 more needed just for the sauce...

I wish you would make more healthy meals. All the dinners look amazing but there's not a great balance. Do koreans really eat so little vegetable?

Add vegetables to them. Carrots, Asian broccoli, tons of greens, any of those would be great. I think he gives basic recipes that provide a foundation that you can build upon.

@@LadyShaydex okay, that in no way nullifies my statement. He doesn’t want vegetables but you do so use his recipes as a foundation and add vegetables. He’s making variations of recipes, no one is stopping you from doing the same.

@@Just-Nikki I think you're missing the point that I'd rather use trusted recipes than cook up an abomination. I would use the recipes way more if they had higher vegetable content and were more balanced. you never know how something will taste if you start changing things
