15 Day Marinated Brisket
Brisket is commonly known as the most difficult item to perfect in BBQ. It’s made up of two different muscles and takes over 10 hours to cook - there’s a lot of things that can go wrong. As such, I’m always looking for ways to make them better. In this experiment I marinated the brisket for over two weeks, and the result was… interesting to say the least!

No not really. You never want to marinade something that long. The meat will lose most of its flavor and mostly all you will taste is the marinade. Its kind of gross in a way because you know you are supposed to be tasting meat but it just seems like you are eating chewy marinade.

Quick tip for cooks starting out: it is almost pointless to marinate something for more than a few hours at most. That brisket would have tasted exactly the same (if not, worse, due to being unfrozen for 2 weeks) than the unmarinated brisket. Marinade does NOT penetrate past the surface. Save yourself some time and marinate anywhere between 1-3 hours and you'll be good to go.
@yaganomabaatuolkuu3702
Жыл бұрын
I will disagree with that. I love marinating overnight and I usually get the bones tasting amazing too. Short marinades do not go all the way through. The meat is also much more tender.
@monadoboiz9778
Жыл бұрын
@@yaganomabaatuolkuu3702 I'm sorry friend, but this isn't something that can be disagreed with. No marinade goes all the way through. It won't go past the surface unless you inject it directly into the meat. This has been proven scientifically by America's Test Kitchen. I've even tried their experiment myself cuz I also used to think otherwise. Don't get me wrong though, overnight marinating is still useful for getting right to the cooking the next day, but it doesn't really do much flavor wise after the first few hours.
@donteventrry
Жыл бұрын
Marination is done for tenderness not for the absorption! Like you said, the marinade can be absorbed only to some extent. I would suggest you to try overnight marination once, you'll like it too!

@stevenjury1864
Жыл бұрын
I make French onion soup by pouring the grease off of the rendered fat that I had seasoned with the jerky rub. then I add onions and water to the roaster containing fat residue and put it back into oven. I bake it at 325*f for a couple hours then remove fat residue and it's done.
