10 lb Pork butt! Only 4 hours!?! Let’s go!!!

I screwed up! I mean, I thought I did. I completely forgot to put a massive 10lb pork butt in the smoker the night before and then ran late on it the next day! So, I tried to see just how fast I could smoke a pork butt and it still be edible. Turns out, I can still surprise myself sometimes.
I ran the smoker extremely hot and fast for the Boston butt cook and while I don’t think I’ll win any competitions with this method, it’s a life saver! I hope you enjoy this video. Smoke on!!!

    I like to have as many tools in my toolbox as possible. I would recommend going 350 instead of 400 to reduce the charring on the outside. The flavor wasn’t bad but I wished the seasoning would have shined a bit more on the outside meat. Thanks for watching! Smoke on!!!

    The Hey grill Hey lady did an interesting video where she basically butterfly'd the roast and smoked smoked it much faster. I've been wanting to try this idea just for the more surface area that can bark and ring. Seems to me those are the best parts with pulled pork after its shredded. I would love to see your way of doing it, Especially since we have the same vertical smoker! :)

    This is awesome and looks great but Why not just cut into smaller chunks before smoking, bonus is you get more bark which equals flavor and texture.

    I tried this a few years ago, I had an afternoon off so I wanted to see if I could cook one hot and fast. I didn’t go as high as 400°, just 300° the whole time, wrapped about 2-2.5 hours in and it was done in 4 hours. I’ve done many that way since.
