2 tbsp sour cream
Salt and pepper to taste
Olive oil for cooking
Instructions:
Heat the tortilla in the microwave for 10-15 seconds, or until soft and pliable.
In a skillet over medium-high heat, add some olive oil and scramble the eggs until fully cooked.
Add the shredded cheese to the skillet and stir until melted.
Add the crumbled breakfast sausage and cooked hash browns to the skillet. Stir until well combined and heated through.
Season the mixture with salt and pepper to taste.
Place the tortilla on a plate and spoon the egg, sausage, and hash brown mixture on top of the tortilla, making a long rectangular shape down the center.
Sprinkle chopped green onions on top of the mixture.
Drizzle salsa and sour cream on top of the mixture.
Roll up the tortilla, tucking in the sides as you go.
