  How many times would I have to bleach my hair in order to at least get a dark gray? I would love a lighter gray but I would be ok with a dark gray

  yep, basically until someone invents some sort of more permanent pigmented coat that covers the cuticle of the hair to make it a lighter colour, this won't happen. Dying hair is like painting with watercolours, you slap a wash of lilac over black all day and it won't change much at all.
