  An application letter can be a short letter used in the email when sending your documents to them, ....a motivation letter can be a detailed letter written in Microsoft Word introducing yourself, listing your relevant skills, background, and/or experience, and describing how you can be a great addition to their team based on your relevant skills, background, and/or experience etc..

  It's better to try France or Germany. They'll have more opportunities and the process is easier. To get a Polish visa is quite difficult. It's very likely that they'll refuse the visa application and you'll lose your money. Also, it's almost certain that after the volunteering is over, you will have to go back. Try Germany or France. As far as I know, they'll have it easier and with more opportunities.
