    Most of my channel is for everyday people getting into outdoor cooking, taking things that are easily available to them and making them taste amazing. Yes, I could use premium meats for everything I cook and of course it will be even better, but when you are able to take the affordable stuff and turn it into something that would suggest it was premium… well that’s a win for my viewers.

    You won’t be disappointed with your purchase! I just had to buy a second one while up in the mountains… the GAS Go-Anywhere as charcoal is not permitted. The gas is good but the coal is where it’s at with flavors and honestly better cooking control when you do an indirect cook like I have moded in this video.

    For the Meatball Rub I use my Flavoricious Rub. It’s got Brown Sugar in it, Paprika, Mustard Seed and a bunch of other stuff. Honestly use any of your favorite Beef Rubs, throw a little in a bowl and roll the meatball around to get it Packed Full of Rub. I also throw a little in when mixing the meat up. Maybe even try your favorite Steak Rub and add some Brown Sugar to it. For the Dr.Pepper BBQ Sauce the ingredients are: -12oz DrPepper, reduced down by 1/4 in pan -1 to 2 Cups ketchup, (I like 1) - 2 cups brown sugar - 2 tablespoon Worcestershire sauce - 2 tablespoon hickory smoke - 1 tablespoon smoked paprika Mix in a pan often to prevent burning on an aggressive simmer for like 15 minutes until enough water burns off and you get your desired thickness. Note: I put 1 tablespoon liquid smoke in the start and 1 at the very end, this helps keep a very Smokey flavor.

    If someone didn't have all of that gear but wanted to still do a low and slow smoke with charcoal, will the 2 by 1 snake method still be effective without the vortex and extension?

    Yes for sure. Depending on what you want to cook will determine the length/size of the Snake you build. Like for short cooks of like 2 hours 1/4” the diameter of my 22” kettle is more then enough with my bottoms vent at 1/4 open and top fully open. If you are going to cook a pork butt or shoulder for pulled pork it should be about 8 hours @ 250f and pull it at an internal temp of 203-205f. I recommend starting out with Pulled Pork as it’s very forgiving do to all the inner muscular fat. It will stall at 165f when the fat starts rendering and cooling it off… this is when I open the vents a little bit to increase the heat if time is an issue for you, if not then it will stall and just let it do its thing until it reaches desired temp. Just make sure to not build a full ring that is connected, you need to leave like 8” gap so it does not burn at both ends making your heat too hot.

    I found this video very informative. I also appreciated the facts about the price being so close to the same as when the unit was originally introduced by Weber in 1979. Definitely a huge improvement over the hibachi that was available up to that time. I think that the modifications show are definitely worth the risk of nullifying the warranty on the unit. All the directions for the modifications made are well explained and demonstrated. Definitely a great informative video!!

    Great video! Very informative! Love the fact that the Weber is still the same price, actually cheaper than it was all those years ago! I still have the one with the wooden handles! But I’m not going to make any modifications to the classic one, I am buying the new one and doing exactly what you’ve done!     Awesome video. I wouldn't worry about voiding a warranty on a $70 grill. Those mods were pretty cool, especially the little divider. You're going to put Slow N Sear out of business!!

    Thank you! Yeah the mods were totally worth it…did a steak last night on it with Hickory Wood and my Flavoricious Rub, it came out perfect and the grill worked just as planned. Heat gauge sat at around 325f for 1 hour. I will post photos of it in a little bit to the Community area on here so be sure to check that out later! 😎👍
