Why are you cooking on high heat with olive oil? Different oils have different smoke points for a reason
As soon as the whites set on the bottom of the egg (10 secs in about) move your egg. It’s the least likely to stick at that point

With stainless steel it really matters how you heat up the pan, rather than the amount of oil/butter. Too cold and it's gonna stick, and if it's too hot then it's also going to stick. Got to have the perfect temperature when you start to cook. Edit: forgot to mention but in the video your pan was perfectly heated with the water but may have gotten too hot due to being on the heat for too long.
I've been cooking with stainless steel since I was 10 and I've always used nonstick spray, it's what works best honestly 🤷🏼♀️

I use this technique to cook rice on stainless steel. The difference is phenomenal.
Are we supposed to turn the heat down after we get the water beads? Or wait at all either after the beads before adding our fat or after the fat and adding the eggs? My eggs keep getting scorched and they still stick...
Don’t use olive oil for high temp cooking applications. The olive oil will oxidize and taste slightly bitter and produces carcinogens above 450°f. If you want a healthy high temperature oil that’s not soybean you can look into buying some sunflower oil. The Russians use sunflower oil all the time for pan frying anything.

Why are they using olive oil 😢 I'm very very familiar with Latin, English, and American cooking... I haven't come across this before. Olive oil is horrible for high heat such as frying eggs.... And I utilize it for flavor... Not for nonstick properties 🤔

Wow, pat yourself at the back but we don't always use butter to cook eggs. And I agree with the other comment about raising the heat then lowering it down, to me that's wasting fuel. A carbon steel wok is still the way to go, or I just use a ceramic takoyaki pan which still cooks perfect japanese omelette at low temperature.
