The 'star people' will be animals by definition as they are habitually driven by external stimuli. They'll have no incentive to develop _wisdom_ as humans have due to their planetary confinement.
The "galaxy, far, far away" line was originally meant to be revealed as the Whills writing about the events in the films, in retrospect. In other words, we're seeing a retelling of events from some other time, which could either be in the distant past or far into the future. We don't know because the line is being written by a character we never see in a time we never see.

I personally think that the original writers of Star Wars really didn't have a good idea of the difference between another GALAXY vs another planetary system. Lotsa "unscientific" folks have difficulty with the different concept of ANOTHER solar/star system and another Galaxy. When you hear the term "Aliens from another Galaxy", its often a good sign the speaker does not quite get the idea. Our own galaxy is so HUGE and populated with so many stars, that involving another Galaxy, millions of light years away, is not needed.
In the Hyperion books, the Magellanic cloud (can't remember which) is part of the story.

Again... Star wars is not sci fi at all. Its genre is just as fantasy as the avengers. The fact that they depict advanced technology does not make a movie sci fi. On the other hand, not most people realize Jurassic Park IS sci-fi : its main conflict comes from the consequences of using DNA technology no one has ever used before with all its ethical and practical implications . So... For a movie to be science fiction it has to start from an existing real technology (science) and imagine and show us how that technology could advance and what problems could it bring (fiction)

Yes I should look through the comments first but to characterize The Martian as almost completely scientifically accurate is almost completely utterly nonsensical. The speed of radio communications between earth and Mars falls between 3 and 22 minutes. Not instantaneously as depicted in an all too typical screenplay.

You overlooked Ross 154 which is referred to in Star Trek TNG including Borg episodes. Frank Ross was an American astronomer successor to Barnard at Yerkes. There are three stars bearing his name within 15 light years of Earth.
