I just tried this cheese since im Filipino and German my dad had some Edam cheese in the Philippines they call it Bola De Queso which just means Cheese Ball lol and its just a ball in the wax rind and when I melted it I was like this would be good in some mac and cheese especially some soul food baked mac and cheese along with some Gouda.

I was at Joël Robuchon in Vegas a while back, and we could see at the end, the chef in charge of the potatoes used a whisk at the end to fluff everything up. I think that’s all you were missing.

You can see that she is not smooth like robuchon . You have to use a flour sieve to make your mashed potatoes Perfectly smooth . If dont you will have some lumps ( even if they are very very small she will never be perctly smooth without a sieve to eliminate the lumps. But your mashed potatoes seems very good
