[About me]
I work at a Japanese restaurant for soba and udon.
I'm Haruma, a Japanese professional chef.

[Concept]
I wanted to introduce a recipe for a small number of people.
I make various cooking recipes based on the concept of Japanese cooking recipes for a small number of people, such as one or two servings.

[Make the sauce homemade]
Yakiniku sauce, okonomiyaki sauce, takoyaki sauce, etc.
Introducing how to calculate the amount and make it homemade without using commercially available sauce.

    My recipe has rice vinegar but I want to try mirin. Can I use both ? or do the flavors not mix well?

    Hi! Konnichiwa! \(*´▽`*)/ Noodles (Chuka-men) used in ramen, yakisoba Tsukemen, and other dishes are made from wheat flour, water, and kansui (lye water). When kansui, an alkaline salt solution, is mixed with wheat flour, it acts on the gluten, resulting in soft, elastic noodles. The distinctive aroma of Ramen noodles is also due to the action of kansui. When baking soda (sodium bicarbonate) is added to hot water, it becomes strongly alkaline sodium carbonate. When spaghetti is boiled in this water, it turns yellow like ramen noodles and becomes chewy. Sorry, I don't know of any substitutes other than baking soda! (^_^;) Arigato! \(*´▽`*)/ Thank you!

    What I usually do is pre-heat the garlic and spices in oil to release the flavour and aroma, then add other liquids like Soy Sauce, Sake etc. to cool it down. After that the marinade has more flavour for the meat to absorb and I marinate the normal length of time. I find it packs a bigger punch for flavoring. I usually try both the regular way and the pre-heating way just to know how much of a difference it makes in flavour profile. I'm definitely going to try this method with your recipe. It looks delicious.

    I just see japan . i press. I saw people eating this in vedio. Some visit conbini, they buy like lawson? Our 7-11 no sell food. Afterall, we eat chicken meat almost every day. Ok. 最高!!! The other day, i buy instant udon. I buy n cook it does not taste well. I add in the sauce. My mum does not like. Me too. I wander why. Is it we not to our taste

    There are many recipes for stir-fried vegetables made with a mixture of yakiniku sauce and oyster sauce. So, it depends on your taste and the amount you put in, but I think it will be delicious! \(*´▽`*)/
