Counter Cooking

Welcome to counter cooking. I want to make it easier for you to eat cheaply and healthy if you’re living in a dorm room, hotel room, RV, camper, van, truck, car, studio apartment, or working in an office - basically, anywhere where you don’t have a lot of space or a full kitchen. I’m going to show you some small appliances that work great and share some recipes to go along with them. All of the cooking that you see on this channel can be done on a counter top.     It has air fryer instructions. You should do it in the air fryer as well.

    Soaking in salted water will soften the skins on the beans, making them more stretchy. This will prevent most of the beans from bursting. This results in more tender skins, and beans that are more intact. As a bonus, in a small cooker like this that tends to boil over, the water will be more clear and make a bit less of a mess.

    My mom used to make salmon croquettes. When I was a little kid, it was the only way mom could get me to eat fish. I want to try this but with canned fish. I’m allergic to chicken. I remember mom making them with bread crumbs and onions and garlic. We ate them with tartar sauce.

    A few little drops of corn oil used occasionally are not going to hurt anyone. Inflammatory seed oils used in larger quantities on a daily basis is something different entirely.

    They’re not raw. I have never seen raw tortillas sold in a store.

    I would have added a little bit of water to the rice. Since you’re using that pan, you may want to check out LaPreferada Mexican rice. You’re supposed to boil for a couple of minutes only but you could probably figure a way around. Not gourmet, but probably better than what you tried.

    I have a cat with tummy trouble. I give her probiotic in her food everyday and switched her to an all raw diet. Tummy issues pretty much solved. My vet wasn’t sold on the diet until she saw my baby’s improvement. Had her four years and most of those four years except the first month I had her(rescue cat who was 4 yrs old when I got her) she has been pretty much all raw. Some exceptions cuz I give her a little sardines in water/ no salt from Trader Joe’s as a treat mixed with her food or a small spoonful of fancy feast pate which is the mildest food on her sensitive tummy. Now she rarely vomits and the farts and diarrhea stopped completely. Thanks for the idea how to steam meat for my kitty easily. Steamed mussels are good for cats if not having salt or veggies mixed with it, esp onions.

    Yes, my cats eat mostly raw also and get probiotics added to their food also. They even get the same sardines you mentioned. 👍😸

    @@RachelArnold-t9p I use human grade probiotic in capsule that you can pull apart to release the powder. I put a pinch of each capsule in her meals or about one to two full capsules per week. I also go the same with a multi enzyme. I e tried the animal grade ones and my cat throws them up.

    Hi Counter Cooking Cook! I have to evacuate for hurricanes & travel light & fast & may or may not have a home to come back to. Which of all the appliances you've demonstrated would you recommend to use with a power bank? And, which brand & how much wattage to have in a travel kit?

    The griddle is more versatile. I would not cook an egg on the grill.

    That looks so good. I totally want to make this. I love bonne maman spread as well as their tea. And their jars I collect and use as my Tupperware at home. So pretty and much better than plastic

    I’m with you. I didn’t use my pie maker for awhile and then used it realizing the sides burn quick and the top barely cooks so I stopped using it entirely. But now I’m inspired to use it again. Thanks for the inspiration

    I use 3/4 cup white rice and double water (1 1/2 cups) - comes out perfect. That's for slightly sticky rice. If you want firmer rice drop the water to 1 and a 1/4 cups.

    I guess if you were desperate to boil water this would be good. However, 34 minutes just for water to boil is quite a long time.

    you woud have to put a rack inside of the rice cooker to elevate the burrito off of the water, and then it would basically steam the burrito.

    I work from home and love the auto shut off feature on my appliances so I can make the most of my lunch hour. I set up my lunch on my break about an hour before my lunch. I love that my rice cooker auto defaults to Keep Warm once it’s timed out on cooking. And my airfryer of course is all timed cook but it keeps the food warm for a long time when left in there. Typically I’ll pull something from my freezer and by the time it thaws snd fully cooks in there, it’s close to 20-30 mins. So it sitting up to 30 mins before my lunch means it’s cooled off enough for me to eat it but still nicely warm too.

    How do you cook using the stainless pots? Why a waffle maker when hotels have those in the serve yourself breakfast in the dining room. I always stay at hotels that provide breakfast as part of the room charge.

    I believe I mentioned in this video that I took a waffle iron with me because I wanted to film videos with it. I put the stainless steel pots on the mini griddle.

    I got a dash pie maker at a thrift store that I’ve struggled to figure out what to do with it. Never thought about making a biscuit. Brilliant! I would make a round crescent roll with the other dough. I wonder if I could cookie a single cookie from cookie dough in there. Thanks for the inspiration

    For the zucchini, what I do is don’t chop up the zuch but keep it whole and zoodle them fresh so they cook up fast. Then I do half pasta and half zoodles. I can zoodle them directly into the pan.

    I have a travel kitchen too. Mine includes my dash griddle and waffle maker. Also an electric kettle cuz most motels coffee makers make gross tasting water. I include metal dishes as yours are but I also try to bring items that can be used in a hotel microwave. So to make a perfect hotel omelet I carry a ceramic handled bowl with a vented lid that I got in Little Tokyo in LA. Sometimes I bring my mini rice cooker that can be used like a cooking pot and not just rice. I also have an egg poacher/ hard boiled egg cooker that I might bring depending on the trip. I carry the electric appliances in a shopping bag but the dishes and accoutrements in a mini suit case too. It has a tiger print on it so all my friends know when I ask them to hand me the Tiger Box. lol. It was an amazing thrift store find. My dishes are small matching set of enamelware bowls, plates and tea cups I found at an antique store during my travels. I love my silicone mini spatula and spoon. Most items are blue so I know what goes in the kit. I even found some blue checkered napkins at a thrift store to bring as placemats or pot holders or…..napkins. Generally I bring a small zip lock of a variety of sizes of ziplock bags and two plastic mugs with locking lids that serve a variety of purposes. At home I tend to use only glass but for travel I found the plastic, tho not my first choice, serves some good purposes. My colander is the collapsible one and so is one bowl. I take the non appliances kit with me camping as well. The bowl I use to wash dishes and the colander as the dish drainer. I have a separate kit of Stanley cookware for camping when I cook over the fire or on my gas or wood campstoves. At home I keep,all those travel appliances in a soft sided cubby box in my kitchen cuz I like to use them at home as well. lol. I mean who doesn’t want to make just one mini waffle to go with breakfast? If I have the time, I’ll make three or four and freeze the rest. So easy to reheat. Thanks for your post and inspiration

    I don’t have a problem with msg because that information is false but l do have a problem with made in China because of the fake good that comes out of China .

    MSG creates HORRIBLE side effects in those of us who are sensitive to it. Headaches, insatiable thirst, insatiable hunger, depression, brain fog, fatigue. There are plenty of studies that have been done about it. Don’t be ignorant.

    That is great! So compact and complete, grest plan, and i love your metal briefcase to hold everything and function as a cooking surface. But wondering-- do you not take a hotplate? That's what i use in a hotel, and here at home, too, don't have a stove. By the way, just a tip-- i recently got the best can opener I've ever used-- the Swing Away brand manual can opener. It's an old brand, strong and reliable, eady to turn and wirks very well, and perfect for me as i have arthritis and can't turn some can openers. Great video, thanks! I'll be on the lookout for a briefcase like this-- perfect.

    These kinds of mixes also work fantastic for pancakes! I also add an egg to them as well as the requested liquid per mix bag. If you wanted to not use an egg, a little bit of ground flax+a little water mixed together also works!
