I just got a gooseneck without temp control. I already had a cheap temp control kettle but it was making a banging noise so I thought i would try the gooseneck. The gooseneck temp controlled were expensive so i thought i will try without temp control. Then i wanted to make green tea 😮 what to do?? Your video saved the day! 💚 😅

Thanks for the video. I do something similar where I pour about 1.5 cups in to the same sort of Pyrex and then wait 4 minutes. No clue if the temperature is right but that's what I've found works.

How much ml of water dis you por in the pot? Or since the pots may vary, how much cm in height of water do you recommend to pour?

I pour enough for one pot of tea. My tea pot is usually around 100-120mL. As for pouring height, I haven’t experimented enough with that to know how much height will cool the water. But obviously pouring the water closer will keep it hotter and further will cool it, however much. Hope that helps!

Modern pyrex is junk knock-off soda-lime glass (not borosilicate anymore) and has a terrible pouring spout. If pyrex is spelled with lowercase letters, it's re-branded interior junk. If PYREX is spelled with capital letters, it's legit borosilicate glass that can better withstand temperature shock.

Very interesting way to use your hisaku, I bought a bronze lid kyoto tetsubin for bon temae and I use a 100 ml teacup as a water cooler, and measuring cup. It is more elegant to pre sift the matcha in a natsume and use a chasaku to measure out two big scoops of matcha. By the way can you feel the taste difference when using the hisaku, does it add bamboo fragrance to the water?

Sorry I haven’t seen your comment for almost a year! 😅 It is definitely more elegant to use a natsume. I find it to be a lot of work to sift and move all the tea into the natsume so I only do it when I’m actually practicing temae. As for the hishaku, yea it does impart a bamboo fragrance! I find it to be quite subtle and sweet. I have a theory that using bamboo tools is actually an important part of matcha’s full flavor experience. 😁

I got that Year of the Ox matcha last year as well, I really enjoyed it! The tin is so beautiful too! I got a Year of The Tiger blend this year, going to collect all the tins until I have a full zodiac set! I also really enjoy their winter Obukucha & Hojicha set as well.

Haha, there’s no wrong! I’m just impatient. 😄 This is also a very commonly used method in Japan for cooling water rapidly for tea. Try it out!

I used to use a temperature control kettle, but it broke. These days I go by the sound of the bubbling. Re how quick it dropped here - could it not have dropped quite a bit before you started filming and before you poured it in the video? Seemed to be quite a bit of time passed. I doubt it poured at 100°c

Going by the sound of bubbling is the way they did it in the old days, for sure! The Bonavita Gooseneck I was using in this video does tend to quiet significantly as the water reaches a boil. It is temperature controlled though and it does reach a full rolling boil at 100C.

This is so cool. Please make more of these! I love tea, and I also live in California. Definitely subbing. Have you ever had Pu-er tea? I'm a fan of the more 'dirty' teas, the teas that taste like grass, like Genmaicha Green.

I'm a ripe pu-er fiend. The raw stuff is hard on me energetically. Just doesn't seem to vibe with my system unless it's super aged, which I can't afford, haha. I'm a big fan of grassy teas, which is why I like Japanese tea so much and also black teas from Fujian. Also some of the green Taiwanese oolongs come out smelling almost exactly like grass clippings!

@@EstherQuaintmere Got a couple reco's for you for UK-based vendors: 1. What-cha. I haven't ever had tea from these guys but they have a good rep. 2. Mei Leaf. Not gonna lie--a bit over priced, but the tea is good. They also have a decent KZread channel! And then there's ordering from Japan direct, which opens up a smorgasbord of options like Yunomi, O-cha, Hibiki-an, Ippodo, Sazen, and more. Hope that helps!

Thank you so much! I dont have a termometer and I always waited for about 1 and a half minute after pouring it in a glass cup (I thought it would take so long to drop to 80C). No wonder it didnt taste good😅 The water was always too cold.
