    So according to lichess database Nxd4 only happens 3% of the time in that position, but if someone does it there is a fun line where you can sacrifice your bishop on f7 with the future ideas of Nxe5 then Qxd4.

    what if the opponent king moves back to safety after king takes Knight?

    If black has his knight out and moves back to e8 then I'd develop Bd3. If when his knight is out he goes to g8 then I'd do Bc4. And if his bishop is out and he moves his king back then I'd do Bc4.
