Nonna (Raffaella) was born in Belsito, Cosenza, a village of about 1000 people, in the Calabrian interior. In 1958, at 19, and newly married, Nonna & Nonno moved to a small town north of Toronto (Ontario), where they had 5 children and 7 grandchildren.
When the Covid lockdown began in March 2020, making these videos seemed like the perfect way to pass the time and have fun, with the added benefit of creating a time-capsule of Nonna's cherished recipes. Making these videos has also proved to be an excellent way to get some physical exercise (especially given Covid) and most importantly, to exercise her brain, to help slow her dementia.
We hope you enjoy Nonna's zest for life, enthusiasm for la Cucina Italian, and her love for her family!

Beautiful recipe and sweetest Nonna! Can I ask if that was a tablespoon of lemon because it looked bigger than a teaspoon and I love lemon but don’t want to make a mistake and add too much liquid. 😊

More than a century ago, my great-grandparents emigrated from Paterno Calabro and Donnici Inferiore to the United States. I learned to make chianuille, turdili and scalille from my grandmother and mother, and they continue to be part of our holiday tradition. We just returned from our first-ever visit to Cosenza. What a beautiful and welcoming land it is! Thank you for sharing your knowledge with us.

I can't wait to try this recipe. My grandparents came to the US from Calabria many years ago. My grandmother used to make a zucchini salad with charred, crushed mint and red wine vinegar dressing. Do you know about how to make that? I've been trying to find a recipe and never have yet. My attempts have not been as successful as I'd hoped.

Unglazed is best. They freeze well in any airtight container/freezer bag.

Grazie. Sorry. It’s not clearly written. “First, Nonna roasts up 2 cups of almonds at about 325 for approximately 12-15 min. She then chops up half and leaves the rest whole. Nonna uses almonds with the skin on, though some prefer blanched almonds - both are great, use whatever you prefer.”
