Hi folks! Thanks for stopping by! I am Indira - I am a nutritional therapy practitioner and a health coach. I have Rheumatoid Arthritis and at one point in my life I was severely disabled and bedridden. I did extensive research on my own trying out different dietary and lifestyle changes and finally after a period of two years fighting the disease, I was able to manage my RA well using a holistic approach. we are experiencing sustained 95 degree farenheit weather . is that ok for the fermenting. ? i have a cooler basement
You can do it at 95 except it will start fermenting much faster. So after 2 days it will be ready and you can move it to the refrigerator!

yes all grains have to be avoided initially.
Can we use any other GF All purpose flour that does not have Garbanzo beans in it ?
yes you can try a different gf flour too. I have tried it with King Arthur's Measure for Measure and it turned out good.
I followed the directions and my tortillas are puffy and excellent with Ottos flour. Wonderful and many thanks :)

Tapioca flour,, also same to cassava flour
No they are both different. Tapioca flour only has the starch while cassava flour has the fiber of the cassava root too.

Alioli which literally means garlic oil. It can be done mashing the garlic in a mortar whilst adding olive oil slowly. That's the original recipe.

Cassava flour is the same that Tapioca Flour?
Hello no cassava flour and tapioca flour are slightly different even though they are both made from the same root vegetable cassava. The cassava flour has all the fiber included in it while tapioca flour has only starch in it.

Hello, you can try using tigernut butter instead of sunflower seed butter. I haven't tried it yet so didn't put that option.

Hello, yes I eat red meat but only good quality like organic grass fed lamb or grass fed beef. Commercial red meat that is grain fed and antibiotic fed are the ones that are inflammatory. Grass fed meat is actually anti-inflammatory and has beneficial omega 3 acids.

What is the difference between Anthony's premium and Anthony's organic cassava flour?
I guess the premium is not organic but there's a great difference in texture and taste of the rotis and I prefer the Premium one.

Can I use canned organic sweet potato ?
Yes you can. however the water content of that is usually higher than if you use homemade. So accordingly you will need less hot water to make the dough.

Thank you for your recipe. I have borrowed the basic recipe and come up with lovely savoury rotis that are great for breakfast. In the dry mix, I have added a finely chopped onion, sea salt, lemon juice, coconut aminos, chopped fenugreek leaves and coriander leaves. I’ve cooked with a little EVO oil and it’s delicious. I’ve also made a stuffed paratha by rolling out two rotis from your original recipe and stuffing with mashed boiled tapioca that is seasoned with sea salt, coriander leaves, chopped onion, lemon juice, and coconut aminos. They turned out really well.
