Using your hands it is much easier to take all the meat and also remove the bones. If you want to use silverware you cook a filet.

I’ve never fancied the look of skate at fishmongers. Fear I think but I’m willing to take a step. Does the fish just flake off the cartilage and is it tasting similar to ‘regular’ cod/haddock/bass ?
