    Grind it in a mortar & pestle, then add hot water to the mortar. Thats it.

    Hi dear . We are producers and exporters of saffron worldwide(from Iran ). Now, that's not my point, but I wanted to say that the correct use of genuine, high-quality saffron is such that even if you place it on ice cubes, it will still release its color and aroma, and there is no need for hot water. Secondly, you should grind the saffron in a special grinder to achieve better results.

    Can you please elaborate on how *much* of the spice blend to use, and how it is incorporated into the dish? Is it placed in the broth with the meat?

    In the recipe you see in the video (spicetrekkers.com/recipes/couscous-style-boiled-dinner), we use 3 tbsp. of our Couscous spice blend. Once the liquids and veggies are in the pot, you add the spice and the other aromatics. That way, you develop a nice broth with all these ingredients.

    Technically, you can infuse it that way, but you’re supposed to grind it with a mortar and pestle and then put it on ice cubes letting it melt

    We've never tried the ice water technique, but we always recommend to infuse it whole in hot water. No matter the technique, you want the flavor of this expensive spice to spread evenly and to be present in every bite. So always avoid just throwing the saffron threads in the recipe, mostly when there's not much liquids in the dish.

    Hi thanks for the vid. Do you ever poweder the labrador tea to be used as a spice in stews? Do you think it could be used like matcha for lattes?

    Hi! You can definitely use it in a stew. If you try to grind it, you'll notice it's quite fluffy, so you won't have a fine powder. So it's best to use it whole (slightly crushed to release the flavors) and put it in a teabag that you can't take out. Just like a bay leaf. The same problem with the texture applies to your matcha question. For a good matcha, you need a special machine to grind the green tea leaves in a super fine powder, so it would be impossible with Labrador Tea which is more oily and fluffy. But you can infuse it like an herbal tea, make a simple syrup or even infuse it in milk for latte.

    Le sumac épice originaire du Moyen-Orient est produit par la variété Rhus Corriaria, que l'on ne trouve pas en Europe et sans doute pas au Canada. Le sumac de Virginie (ou vinaigrier) est celui dont on voit une inflorescence sur votre vidéo. Celles-ci peuvent être utilisées pour confectionner une limonade parfois appelée sumacade.

    He is an orientalist buffoon. Grind your saffron with salt and/or very tiny amount of sugar, then put it on ice cubes. Once the ice has melted ad a tiny bit of hot water to awaken it fully.

    Est ce bon en cuisine en marinade pour viande ? On dirait un équivalent au citron . Je m’interroge sur la différence avec ce dernier au niveau du goût

    C'est une épice acide, mais qui n'aura pas la même intensité et saveur que le citron. Le citron peut servir comme acidifiant dans une marinade, tandis que le sumac devra être jumelé avec un vinaigre (de vin rouge par exemple) pour bien jouer son rôle dans une marinade.     Persians do it this way. I take 3 cubes and add saffron. Let it sit for a few hours. Gets really good color
