Please subscribe to our channel 😁 Here's the recipe for Masala Mushroom ### Ingredients: - 200 grams mushrooms, cleaned and sliced - 1 large onion, finely chopped - 2 tomatoes, finely chopped - 3 green chili, finely chopped - 1 tablespoon grated ginger-garlic - 1/2 cup kaju (cashew nuts) - 2 tablespoons oil or ghee - 1 teaspoon cumin powder - 1 teaspoon coriander powder - 1/2 teaspoon turmeric powder - 1/2 teaspoon red chili powder - 1/2 teaspoon garam masala powder - 1 teaspoon kasuri methi (dried fenugreek leaves) - Salt to taste - Water as needed ### Instructions: 1. **Prepare the Kaju Paste:** - Soak the cashew nuts in warm water for 15-20 minutes. Drain and grind them into a smooth paste with a little water. Set aside. 2. **Cook the Mushrooms:** - Heat 1 tablespoon of oil or ghee in a pan over medium heat. - Add the sliced mushrooms and sauté until they are lightly browned and most of their moisture has evaporated. Remove the mushrooms from the pan and set aside. 3. **Prepare the Masala:** - In the same pan, add the remaining oil or ghee. - Add the finely chopped onions and sauté until they turn golden brown. - Add the ginger-garlic paste and green chili, sauté for another 2-3 minutes until the raw smell goes away. - Add the chopped tomatoes and cook until the oil starts to separate from the masala. 4. **Spice it Up:** - Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a minute. - Add the prepared kaju paste to the pan. Mix thoroughly and cook for 2-3 minutes, stirring continuously to avoid sticking. 5. **Combine Everything:** - Add the sautéed mushrooms to the pan. Mix well so that the mushrooms are well coated with the masala. - Add garam masala and kasuri methi. Mix and cook for another 2-3 minutes. - If the gravy is too thick, add a little water to achieve the desired consistency. 6. **Serve:** - Serve hot with naan, roti, or steamed rice. Enjoy your Masala Mushroom with Kaju paste!
