I popped it in the fridge in tin foil and every time one of us walked past cut off another chunk to nibble!!! Took 3 days of 4 of us picking and dinners

I've cooked a lot of brisket, but our options in the UK are really limited. Some grass fed stuff is OK, but you are paying way over the odds. Whereas you can pickup decent short rib in the supermarket and cheeks at the butchers. 9/10 it's coming out better than the brisket with half as much work. Cheeks are awesome, cook them.
@Anonnymouse53 I just did a brisket video. The brisket was uk grass fed ex dairy from meat matters and was reasonable in price plus lots of intramuscular fat 😉 go have a look. You will not be disappointed. But generally speaking you are 100% right ✅️

I just did a nice grass fed, dry aged brisket - but I had to order it specially, be real careful with my temps, finish it confit in tallow, etc. I'll always be jealous of being able to walk into most Costco's and being able to buy a massively marbled one for less!

Bloody great stuff Duncan! My first thought like most is that you mean KIMCHI. But to me it is a side dish like beans or cauli greens. The only Korean sauces I can think of are Cho gochujang and Ssamjang. Cho gochujang is closest in technique to chimichurri. Both chilli based and deliciously spicy. 🔥🤙🏾🍻

@BrothersoftheGrill awesome. I rarely buy prime cuts, and wait for specials on the big cuts like packers....otherwise we try and use one of the grills/pizza oven 4 to 5 times a week. My better half is from SA so we love to have a group round the heat. I look forward to seeing more content
