I’m going to talk about japanese culture and food, and cook from authentic Japanese cuisine to homemade dish.

The reason I began this channel is that,
I’d like to love Japan more.
And I’d like to love all over the world more.
Knowing leads us to peaceful world.
I’d love to contribute our future.

    I really loved this video! I remember wishing you'd explain more about the different shoyu's in a previous video so this was so awesome and interesting. And your calligraphy is just stunning. Thank you for such an informative video! I'm a little sad because I have to eat Gluten-free and there isn't a lot of variety in Gluten-free shoyu, but even so I like learning about stuff like this 😁

    Are any of these shoyu considered light or reduced sodium? With health high salt can be problem.

    No, they are not light or reduced sodium. But, I'm sure these traditional soy sauce has Umami so much, so we can reduce the amount of soy sauce when we use or season something. Thank you.

    Thoroughly enjoyed. My Japanese grandfather as a young man came to U.S. shortly after 1900. Although his children, including my Dad did not speak Japanese, my Dad always said shoyu, not soy sauce. That pronunciation obviously came from his father. Appreciate your work!

    I love to eat tsuyu somen and zaru soba in hot weather. I haven’t had either in many years. Thanks for posting the video. It reminds me of happier times.

    I recently had Hiyakake for the first time! Cold soup is a little unfamiliar here, but I actually liked it. Could you sometimes show your take on Tsukemen?     Myoga is v difficult to find for me. Is there a substitute or can I omit it? I wld like to try both recipes! The heat has been unbearable, so cold noodles sounds fantastic

    Yes, you can omit it. I sometimes omit it and that time I use only spring onion. Please try it! Yes, the heat is crazy in Japan too😵 Please take care!

    sadly, somen is not very popular here, but i learned to use chopsticks about 20 years ago, and I use them quite often, even to scramble eggs or cooking ^_^

    The interesting thing about teriyaki is that it's not authentic Japanese food. It's a recipe invented by Japanese immigrants in Hawaii.

    Ohayo gozaimasu Ryusei! Your ginger ale syrup recipe sounds delicious! I will try making it later this week. I have a little bottIe of yuzu juice in my refrigerator. I only need to buy some fresh ginger root to have all of the ingredients. I think there is a local butcher shop that I can buy some fresh pork belly to make simmered pork. Thank you for teaching these recipes. Arigato!

    Where I live most people really enjoy Ginger Ale. I will most certainly have to give that and the braised pork a try! You put a lot of effort into your videos and It shows every time! Your filming space is always very clean and well kept too! Although I am just a viewer, I am proud of you!

    I love using the spice mixture twice. I wouldn't want to "waste" so much ginger and spices on a drink, but then to make a tasty dinner the next day too, then OK!

    I like to remove some of the fat, so the dish is not too fatty, but spices are usually "fat-soluble", so fat contains a lot of the flavour and I never remove it completely

    Thank you for telling your opinion. Yes, I agree we shouldn’t remove it completely. In Japan, there is the way after grilling, add pork boiling water to remove fat more. Actually in Japan, whether we should remove fat or not is different between people. Thank you! Your opinion is really helpful for me!

    Do you mean that I use grape or orange soda instead of soda? Or i make grape or orange soda from scratch? If first, I don't use these, because ginger syrup has enough sugar. But if I reduce the amount of sugar, I might add these soda. And, second. I can't make these soda now, but it's really interesting. If I misunderstood what you said, please tell me.     Ginger beer? Actually I had never known about ginger beer a few weeks ago. Because, in Japan we're not allowed to make beer in our house or restaurant. But we can make non alcohol beer! I'll learn it and if I could make good quality of non alcohol beer, I make a video. Thank you!

    I agree that it's good to remove a little bit of fat depending on the dish. But pork fat is so delicious sometimes that there are plenty of times to just keep it.
