Forgive my ignorance, but you said "10 and 2" What does that mean and how long was each rotating and turning segment? Just got my Grill Grates and want to try your method. Looks delicious!!
Great question! Think 10 o’clock and 2 o’clock rotating the meat to coordinate with the hands on the clock, if that makes sense. That just creates cross hatch marks I usually make the rotation after about 30 seconds or so. Thanks for watching!
Can it be done on stovetop n oven? Different results, obviously, but just curious. Cant afford the big time grills y'all use.
Absolutely! Start it in the oven, once it reaches 115, take it out and sear on the stovetop with a skillet.

Scottish friend steered me at Macallan back in 1985. The 12’s & 18’s from ‘85-‘92 are a whole other level. Today’s Macallan is painful for me because it’s still good enough to remind me of how it used to taste. Can’t sip a dram today without thinking about how it used to taste.
