Here’s a simple recipe to make kala chana paratha: Ingredients: **For the dough:** - 2 cups whole wheat flour - Water (as needed) - Salt (to taste) - 1 tsp oil (optional) **For the stuffing:** - 1 cup kala chana (black chickpeas), soaked overnight and boiled - 1 medium onion, finely chopped - 2 green chilies, finely chopped - 1-inch piece ginger, grated - 1 tsp cumin seeds - 1 tsp coriander powder - 1 tsp garam masala - 1/2 tsp turmeric powder - 1/2 tsp red chili powder - Salt (to taste) - Fresh coriander leaves, finely chopped - Oil or ghee for cooking ### Instructions: 1. **Prepare the dough:** - In a large mixing bowl, combine the whole wheat flour and salt. - Gradually add water and knead to make a smooth dough. - Add a teaspoon of oil to make the dough more pliable. Cover and let it rest for at least 15-20 minutes. 2. **Prepare the stuffing:** - Drain and mash the boiled kala chana coarsely. - In a pan, heat a little oil and add cumin seeds. Let them splutter. - Add the chopped onions, green chilies, and grated ginger. Sauté until the onions turn translucent. - Add the mashed kala chana, coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes. - Stir in the chopped coriander leaves. Let the mixture cool. 3. **Assemble the parathas:** - Divide the dough into equal-sized balls. - Take one dough ball, roll it out slightly, and place a spoonful of the kala chana stuffing in the center. - Gather the edges and seal the dough ball. - Roll out the stuffed dough ball gently into a paratha. 4. **Cook the parathas:** - Heat a tawa (griddle) on medium-high heat. - Place the rolled-out paratha on the hot tawa. - Cook until bubbles start to appear, then flip it over. - Apply a little oil or ghee on both sides and cook until golden brown and crispy. - Repeat with the remaining dough and stuffing. 5. **Serve:** - Serve the kala chana parathas hot with yogurt, pickle, or any chutney of your choice.     Mooli Cheela Recipe **Ingredients:** - 1 cup besan (gram flour) - 1 medium-sized mooli (radish), grated - 1 small onion, finely chopped - 2 green chilies, finely chopped - 2 tablespoons fresh coriander leaves, chopped - 1/2 teaspoon cumin seeds - 1/2 teaspoon carom seeds (ajwain) - 1/4 teaspoon turmeric powder - 1/2 teaspoon red chili powder - Salt to taste - Water as needed - Oil or ghee for cooking **Instructions:** 1. **Prepare the Batter:** - In a large mixing bowl, add the besan. - Gradually add water while whisking to make a smooth, lump-free batter. The consistency should be similar to pancake batter. 2. **Add the Vegetables and Spices:** - Add the grated mooli, chopped onion, green chilies, coriander leaves, cumin seeds, carom seeds, turmeric powder, red chili powder, and salt to the batter. Mix well. 3. **Heat the Pan:** - Heat a non-stick tawa or skillet over medium heat. Lightly grease it with oil or ghee. 4. **Cook the Cheela:** - Pour a ladleful of batter onto the hot tawa and spread it evenly in a circular motion to form a thin cheela. - Drizzle a little oil or ghee around the edges and cook until the bottom side turns golden brown and crisp. - Flip the cheela and cook the other side until golden brown. 5. **Serve Hot:** - Remove the cheela from the tawa and repeat the process with the remaining batter. - Serve the mooli cheela hot with yogurt, chutney, or pickle.     Avocado Paratha Recipe **Ingredients:** - 1 ripe avocado - 2 cups whole wheat flour (atta) - 1 small onion, finely chopped - 1-2 green chilies, finely chopped (optional) - 2 tablespoons fresh cilantro, chopped - 1/2 teaspoon cumin seeds - 1/2 teaspoon turmeric powder - 1/2 teaspoon red chili powder (optional) - Salt to taste - Water as needed - Ghee or oil for cooking **Instructions:** 1. **Prepare the Avocado:** Cut the avocado, remove the pit, and scoop out the flesh into a bowl. Mash it well with a fork until smooth. 2. **Mix the Ingredients:** In a large mixing bowl, combine the whole wheat flour, mashed avocado, finely chopped onion, green chilies, cilantro, cumin seeds, turmeric powder, red chili powder (if using), and salt. Mix everything together. 3. **Form the Dough:** Start kneading the mixture into a dough. Line an 8x8-inch baking pan with parchment paper or grease it lightly. 2. **Prepare Sweet Potato:** Cook the sweet potato until tender. You can microwave it for about 5-7 minutes or bake it in the oven until soft.     Vegetarian Mapo Tofu Recipe **Ingredients:** - 2 tablespoons vegetable oil - 2 cloves garlic, minced - 1 tablespoon ginger, minced - 2 green onions, chopped (separate white and green parts) - 1 tablespoon Sichuan peppercorns (optional, for authentic flavor) - 1 tablespoon fermented black beans, rinsed and mashed - 1-2 tablespoons doubanjiang (spicy fermented bean paste) - 1 cup vegetable broth - 1 tablespoon soy sauce - 1 tablespoon hoisin sauce - 1 tablespoon cornstarch mixed with 2 tablespoons water (for slurry) - 1 package firm tofu, cut into 1-inch cubes - 1 teaspoon sesame oil - Salt and pepper to taste **Instructions:** 1. Heat the vegetable oil in a large pan over medium heat. 2. Add the minced garlic, ginger, and the white parts of the green onions. Sauté for 2-3 minutes until fragrant. 3. If using, add the Sichuan peppercorns and stir for another minute. 4. Add the mashed fermented black beans and doubanjiang to the pan, stirring well to combine. Cook for another 2 minutes. 5.     Yes, here I have used soft tofu. you can use whichever you prefer. I used to make with firm tofu but over time have come to love soft tofu in Mapo Tofu.
