    love empenadas. Every country has their version. My BIL is Puerto Rican and his dad makes these all the time. Fried and baked. But they add their wonderful sofrito to it which makes EVERYTHING taste yummy! ❤

    I just made this today. I had a gallon of 2% milk that needed to be used. Everything turned out accordingly, the only thing I was bummed about? It was firm. The liquid was still hot and in the pot. I put it back in with it in the cheese cloth, hoping it would soak up some of the liquid and be creamier. Didn't get to that point. Maybe because it was low-fat. You did say it would be ok. Next time? I'll add heavy cream or use regular milk. Overall, it will still be enjoyed. I had some on bread, drizzled with honey. And a hot cup of tea. 👍Not bad. 😊❤

    I've got News for you all. You can NOT overcook orzo pasta. I tried it purposely b/c I had recent oral surgery that temporarily keeps me from chewing solid foods. I cooked it for 30 minutes in salted water . . . then I drained and transferred it into my pasta sauce and simmered it for over an hour. At the end . . . it was just as firm as it was after the 12 min recommended cooking timed. So . . . for you absent-minded cooks who might forget it on the stove . . . No Problem! For others that share my predicament . . . Not So Much!
