Cooking with healthy ingredients has always been my passion. Through this channel, I showcase my delicious and simple family recipes. While most of them are Chinese dishes, I do occasionally share other creative ideas as well.

If you are tempted to cook Chinese dishes but worry about the lack of professional chef skills, you might have just spotted the right channel as none of my homemade recipes requires professional skills. Yet, they still offer authentic tastes.

    I do have a rice cooker but I think I'm going to have to buy an Instant Cooker. Everyone is using them now.

    hmmm. If you have all purpose flour, it may work. The taste will be different though

    The only time I tried fried eggplant was when my cousin's italian grandmother made me some as a little kid. I was a picky eater back then, but it was really good. This recipe looks delicious.

    I just want to know where you got that fermenting crock! ...and if you can just add 5 spice powder instead of the individual spices.

    I got the jar from Amazon. Hopefully the link works for you. As for the five spices, it may work. I never tried it before.     Before the invention of the refrigerator, preserving eggs in brine was a traditional method. This technique could keep the eggs preserved for months, but they would become extremely salty over time.

    Thank you thank you thank you!!! I loved this as a kid and was devastated when I realised I never learnt to make It and couldn't find an English language recipe! I am going to make it and remember my Auntie. She used to come and make them in the winter and I'd steal them from the plate as soon as she took it out of the oil 💕

    I actually stir fry my Chinese eggplant till soft and then mix it with ground pork and scallions.

    Yes gotta used that fatty pork so the bun fillings are more juicy. Fat = Flavor!

    About how long does it generally take for the pears to wrinkle in the water at the end? Just wondering an estimate, can I walk away for a bit or do I need to watch it closely?

    Depending on the size of the pear, I'd say around 20 minutes ish. You should be able to walk away :) and check it from time to time. Thanks.

    Hand breaking the cabbage is something I'll absolutely try. If I put one Szechuan peppercorn into my dish it'll be too hot, LOL. I could never handle heat like that.

    I usually cut my bitter melon into strips rather than coins and filling them with a meat filling. But your version looks delicious too.

    Asian grocery stores typically have it, like H Mart or Lotte Plaza. Hope you find one near by. Otherwise, you could try apple pears, which both safe way and target have from time to time.

    Thank you for the video . Question , I saw a historical drama where they made duck fat sesame flat bread . If I want to make that using your recipe do I add the duck fat during the frying process or in the paste ?

    That is an interesting question. I actually have never tried duck fat before. I would try melt the fat and use the oil to make the paste. Let me know how it goes!

    Excellent recipe! Just made it. For those making this, the shrimp go in shortly before the slurry goes in. You can see them floating in the pot as she’s stirring. Highly recommend everyone try this.

    I used to stir fry the broccoli directly and add sauce to the wok. Now I do this and boil the broccoli first so it's semi-cooked and then sauce it. Happy cooking and I'll see you around.

    Awesome, thanks! I can follow along pretty well and piece together the missing parts like letting the cabbage sit to render the water, and squeezing out the water prior to adding it as part of the filling. I'm guessing you are adding it without rinsing off the salt since you are only using little bits of soy sauce for the filling. I'm curious why use cabbage water instead of regular water or stock?

    @shinnoski, good question. Cabbage juice enhances the taste of the soup while water dilutes the taste. Pork or chicken stock in the traditional recipe is still the best choice. However, it takes time to prepare for the stock, as I mentioned at the beginning of the video. The alternative for a lazy chef like me is to use the natural veggie juice :). Technically, chicken broth may work too but I would not use water.
