I tried this today and my baked cheese balls were breaking when taking out of the tray. Where am I going wrong? Also, does the Ricotta +sugar mix was granular in texture…was that right?

Usually it breaks during baking if it is overheated or overmixed. I guess you might have overmixed since you also mentioned about ricotta + sugar mix being granular. Or, it might have been overheated in the oven. Try using powdered sugar and also let it cool for few minutes after baking. Sorry, we should have added the cooling step in the video.
