During the beginning of my cooking journey, I remember researching recipes and I would get so overwhelmed with complicated recipes with long lists of ingredients. I wanted to make cooking simple and easy for anyone who wants to. Hence, my recipes are SIMPLE & DELICIOUS!
I've also started this channel as a way to extend my legacy in the form of recipes for my kids to have access to in the future. I also would like to share it with all of you! I hope to inspire you to get in the kitchen just as others have inspired me. I only share recipes that I absolutely love...If I wouldn’t eat it, I wouldn’t put it on my channel!

Skillet Shrimp Fajitas Ingredients For the shrimp 1 lb shrimp, peeled and deveined 1 teaspoon chili powder 1/2 teaspoon paprika 1 potato, small diced 1 bell pepper, diced 1 onion, sliced 1 teaspoon paprika 1 teaspoon garlic powder For the chipotle sauce 1/2 cup mayo 1-2 chipotle peppers in adobo sauce 1 tablespoon honey Tortillas Chopped cilantro Directions Season shrimp with chili powder, paprika, salt and pepper. Heat oil in a pan over medium high heat and sear the shrimp about 1 1/2 minutes per side, until cooked through. Remove, set aside and wipe pan clean. Add more oil to the pan over medium heat and add potatoes. Cook until potatoes start to get tender, about 5-7 minutes. Stir in paprika and garlic powder. Stir in bell peppers and onions and cook for another 3 minutes. Stir in shrimp and remove from heat. Serve with chipotle sauce, chopped cilantro and tortillas. For the chipotle sauce Combine mayo, chipotle peppers, a little adobo sauce and honey in a blender or food processor and blend until smooth.

Taco Dip Ingredients 1 lb ground beef 2 packets taco seasoning, divided 3/4 cup water 8 oz bar cream cheese, softened 16 oz container sour cream 1 1/2 cups shredded cheddar cheese 2-3 Roma tomatoes, seeded and diced 1/2 cup sliced green onions Directions Heat oil in a pan over medium high heat and add ground beef. Cook until cooked through and drain excess liquid. Stir in one packet of taco seasoning and water. Cook until all the liquid has been evaporated. Let cool while working on the next layer. Combine softened cream cheese with sour cream. Mix in the second packet of taco seasoning. Spread mixture onto the bottom of a 9 x 9” dish or something similar in size. Layer ground beef over the top. Sprinkle over shredded cheddar cheese. Sprinkle over diced tomatoes and green onions. Serve immediately with chips or store in the fridge for later.

One Pan Shepherd’s Pie Ingredients 1 1/2 lbs ground beef 1 onion, diced 3 garlic cloves, minced 3 tablespoons flour 2 cups beef broth 2 tablespoons Worcestershire sauce 1 tablespoon soy sauce, or more to taste 2 large potatoes and sliced, cut each slice into fourths 1 1/2 cups frozen peas 1 1/2 cups shredded cheddar cheese Directions Heat oil in a pan over medium high heat and brown ground beef. Cook until cooked through, drain excess liquid. Add a little bit more oil, onions and garlic. Season with salt and pepper and cook for another 3 minutes. Stir in flour. Stir in beef broth, Worcestershire sauce, and soy sauce. Stir in potatoes, season well with salt and pepper and bring to a boil. Lower the heat to medium low, cover and cook for 15 minutes. If it’s starts looking dry, add little broth or water. Stir in peas. Cover and cook for another 3 minutes, or until the potatoes are tender. Top with cheddar cheese and cover or place under the boiler until cheese has melted.

The only difference is I add a tad more seasoning and olive oil and let it marinate for a few hours to overnight. Drain excess liquid. Add more oil and sauté onions, mushrooms, and garlic. Season with salt and pepper and cook for 5-6 minutes. Stir in flour. Stir in beef broth and Worcestershire sauce. Season well with salt and pepper and bring to a boil. Reduce heat to medium and cook until slightly thickened, about 2 minutes. Remove from heat and stir in sour cream. Add more broth if you prefer a thinner consistency. Serve over noodles, mashed potatoes or rice. Our favorite is over a baked potato top with green onions!

My daughter and husband made a big batch of tomato/basil pasta sauce using the bounty from our garden. We initially ate it without meat but for leftovers last night I wanted some meatballs and I knew you’d have a good recipe! These turned out great and really complimented their hard work. Hi Joanne! I looked up this recipe to make it again and realized I never sent you praise for its deliciousness the 1st time I made it! My sister made it (and loved it, too) to change up her lunches she packs for work. I’ll be making it again soon-I have a large portion of green beans ready to go!! Try uncooked ziti next time. The noodles will cook in the meat sauce. It will definitely change the flavor of the noodles

Baked Ziti Ingredients 1 lb ziti noodles (can also use penne or rigatoni) 1 lb ground beef 1/2 onion, diced 4 garlic cloves, minced 2 teaspoons dried basil 2 teaspoons dried oregano 28 oz can crushed tomatoes 15 oz tomato sauce 12 oz mozzarella cheese, shredded (3 cups) 15 oz ricotta cheese Directions Preheat oven to 350°. Cook pasta in salted water according to package instructions. Drain and set aside. Season ricotta cheese with salt and pepper. Heat oil in a pan over medium high heat and add ground beef. Season with salt and pepper and cook until cooked through, about 4 minutes. Drain excess liquid. Add a little more oil to the pan along with onions and garlic and cook for 3 minutes. Stir in dried basil and oregano. Stir in crushed tomatoes and tomato sauce. Season generously with salt and pepper and bring to a boil. Lower heat to medium low and let simmer 5 minutes. In a 9 x 13 baking dish layer in order - Half of the noodles - Half of the meat sauce - Half of the mozzarella cheese - Ricotta cheese - Rest of the noodles - Rest of the meat sauce - Rest of the mozzarella cheese Bake for 30 minutes.

Shrimp Boil Foil Packets Ingredients 1 lb shrimp 12 oz sausage (smoked or andouille), sliced 1 lb red potatoes ( I used baby red potatoes) 2-3 ears corn (fresh or frozen and thawed), cut into 1 inch pieces Old bay seasoning, as needed 4 tablespoons butter Olive oil Directions Place potatoes in a pan and cover with water. Bring to a boil and boil until potatoes are tender, about 15 minutes. Remove and dice the potatoes (if using baby potatoes cut into fourths). Lay out 4 sheets of foil. Divide shrimp into 4 portions and place onto the center of the foil. Sprinkle over old bay seasoning. Layer over sausages, potatoes and corn. Sprinkle again generously with old bay seasoning. Drizzle each with olive oil and top with 1 tablespoon butter. Seal foil packets well and place onto a baking sheet. Preheat oven to 425° and bake for 20 minutes. Add more old bay seasoning to taste and serve with crusty bread if desired. Note Old bay seasoning does have a slight kick. If you you’re sensitive to heat (like my son) you can season the packets with smoked paprika, garlic powder, onion powder, salt and pepper.

Chipotle Chicken Wraps Ingredients 2 chicken breasts, sliced in half lengthwise and pounded evenly Onion powder Garlic powder Salt & pepper 1/3 cup flour Shredded lettuce Sliced tomatoes Shredded Monterey Jack cheese For the chipotle sauce 1 cup mayo 3 chipotle peppers in adobo sauce (or adjust to taste) 1 1/2 tablespoons honey Directions Slice chicken in half horizontally and place parchment paper or plastic wrap over the top and pound evenly. Season chicken on both sides with onion powder, garlic powder, salt, and pepper. Dredge into flour. Heat oil in a pan over medium high heat and cook chicken until cooked through, about 3-4 minutes per side. Cut chicken into slices. For the chipotle sauce, blend all the ingredients together in a food processor/blender. Warm tortillas over the stove or microwave to make them more pliable. Place lettuce and tomatoes on the bottom middle of the tortilla leaving an inch around the perimeter. Season tomatoes with a little salt and pepper if desired. Drizzle over chipotle sauce. Top with chicken slices, another drizzle of chipotle sauce and sprinkle over shredded cheese. Use your fingers to tuck the sides in and roll up wrap nice and tight. You can cover with a piece of foil to keep the wrap intact and store in the fridge until serving.

I made it the day before then the next day placed it into a cooler when we went on a 2 hour road trip. Then I transferred it to a fridge when we arrive and it held up nicely! Even had it again the next day. Hope that helps!😊
