  So I've noticed that unlike most simple cocktails (liquour + fizzy drink), high end cocktails tend to be mostly alcohols, with some extras. Is there a reason for them to be stronger?

  Not so much high end cocktails as what would be "traditional" or classic cocktails. Things like a martini, a negroni, Manhattan, old fashioned. Drinks like that are all blends of alcohols. They originally came from trying to mask bad, cheap or inferior alcohol during prohibition and have turned into more of a craft and an art now
