This is correct. No expansion gap is needed for GlueDown flooring. However, the issues you describe are common symptoms of poor subfloor treatment and unaddressed moisture issues. Can you use LVP on a wooden subfloor? If so, what would be the best way to make level adjustments?

Depends how bad it is. High spots can be plained or sanded provided its no more than 1/5th of the thickness of the wooden subfloor, anymore than that will start demishing its structural integrity. Low spots can be filled with a self-leveller combined with a latex additive, but you must use a suitable primer first - the primer allows it to stick to the wooden subfloor and the latex gives it the flexibility so it doesn't crack when then wooden subfloor expands and contracts with temperature amd humidity changes. Also, you don't necessarily need to be "level", but you want to have it 'flat'. If you have already purchased the floor, there will be instructions that will tell you what the tolerance of the subfloor must be. This will vary from product to product, but its generally no more than a 1mm subfloor deviation over any 1m length for most glue down vinyl products. If its that bad that the tolerance cant be reached, maybe a floating floor would be a better option as it allows more room for error, usually 2mm over 2m or 3mm over 2m for some thicker 6.5mm hybrids.
