All the onigiri tutorials I saw only showed the small seaweed bit on the botton or included plastic packaging for wrapping it :( thank you for showing the full wrap! I thought there was more to it, but it's very simple
This is very old. However, I found Chinese sausage at Costco, but I didn't care for the taste. It was too sweet and not spicy enough for me.
When we know the noodle is ready for mixing it with the other ingredients and prevent that they don’t get sticky?
Use water for nori glue, it will be easier

*Salmon Onigiri* Jinspinky - KZread kzread.info/dash/bejne/ZWyHtrKyoqm6pco.html *Ingredients* 2 Tbsp Dark Soy Sauce 1 Tbsp Mirin 1 Tbsp Sake 1 tsp Baker’s Sugar Ultrafine Pure Cane Sugar Fresh Wild-Caught Salmon 1 cup of cooked Japanese short-grain rice Rice Wine Vinegar Sprinkling Green Nori Seaweed Furikake Nori Seaweed sheet, cut to the size of the mold bottom Dill, finely chopped *Directions* In a glass bowl add soy sauce, mirin, sake, and sugar-stir to combine. On an aluminum lined baking tray place salmon-brush on the soy sauce mixture and bake at 425 oF for 12 minutes. To the cooked rice add a splash of rice wine vinegar, a splash of mirin, and a goodly amount of furikake-gently mix to combine. Place the bottom half of your *Good Sando Riceball Maker by Akebono (Amazon)* onto the cut half sheet of nori seaweed (dull side up). Pack (not too firmly) the rice mixture into both sides of the bottom half of the mold (pat the rice down level with the top of the bottom half of the mold). Place the top half of the mold on top of the rice and firmly push down until the top of the mold touches the bottom of the mold-remove the top half of the mold. Gently push down on the two halves of the onigiri while lifting up the bottom half of the mold to remove the mold from the rice. Fill one of the two sides of onigiri with small pieces of salmon. Carefully pick up the nori with the half of the onigiri without salmon and gently place it onto the half of the onigiri filled with salmon being careful to align the two halves of the onigiri (the top of the triangular shaped onigiri should just be peeking out when the two halves of the onigiri are correctly folded together). Fold the nori around one side of the onigiri. Place a single grain of cooked rice on each of the two folded over sides of nori to act as “food glue” to hold the other side of the nori when folded over to enclose the onigiri. Place your onigiri on a serving plate, garnish with a small spoonful of salmon, and sprinkle a bit of dill on the salmon to serve. Enjoy : )
Hi, Thanks for the video. Those onigiri plastiC molds look very useful - I can never make rice stick together and make any shape by hand. How are they called? Where to get them?

So much flour in all the skin you trimmed off, keep it on and use to close the chicken after stuffing to keep all the juices inside xx

I like how it was messy in the end. Like you I am also clumsy in flipping, however for this dish, it still held everything together and being not a perfect circle omelette makes it seem like an authentic street food 😋 Btw, other than celery leaves, can you use any lettuce, cabbage or any leafy greens?

Not sure if the flour is weighed or measured. Assume measured since other ingredients are. I like the way the dough got folded. And the working sounds are like home. Very cute apron. Thanks.
