  I love these type of cookies but can you tell me why one needs to use so much icing? I haven’t been baking long and all my teachers all say it’s how it’s always been done 😂 what’s your take on it?

  It all depends on the customer's wishes when placing the order and the photos of the cookies that the customer sends for inspiration. Personally, I prefer cookies with buttercream or textured cookies without any icing at all.

  Thank you for the thorough tutorial! I am actually attempting to make modeling chocolate (for the first time), or I guess candy clay? I'm using the white melting wafers. I've tried a few batches, I thought I had it, but keep getting modeling chocolate that's smooth, but has not very much stretch/elasticity (I was expecting less than fondant but more than I have), and it's almost crumbly when I poke it. I can smooth it, but it doesn't look smooth like yours. It also is not firm after sitting on the counter overnight. It isn't falling apart either. I don't know if you still monitor comments here. Even if you don't, I did appreciate the tutorial. 😊

  I used to do pottery ceramics this channel reminds me of my ceramic shop before it burns down. So I can't start it back up again but I love to bake..   When creating designs, instead of tracing the cookie shape, I use water based stamp pad.
