  Quality pork lard is by far the best but only if the fries are fresh. I mean pork lard is basically bacon juice. Beef lard I think is terrible, it has a way too strong of a smell and flavor.

  As someone who loves cooking, unsalted butter is a gift from the gods, being able to add your own salt makes a huge difference, also lard is better than oil in 9 out of 10 cases, including deep frying, I prefer pork lard though, much less scent
